Hello all

I was just wondering if any of you pack lunch for your DH? Mine is a truck driver and he's been trying to eat better and has been doing pretty well for the past month. He packs his lunch when I don't feel like it (about half the time - hehehe) but he's really starting to get sick of sandwiches. He normally gets turkey, PB, or tuna sandwiches on whole wheat bread or sometimes I use flatbread for a wrap.

He has no way to warm anything up and doesn't like salad on the road - says he just doesn't have the time to eat them, but he does pack lots of veges and fruit that he picks at throughout the day and brings home empty containers.;)

I also pack nuts and string cheese and maybe some sunchips. Like I said, he is just eating healthier - which is a big improvement from fast food.:)

Any suggestions on a sandwich substitute? Any other suggestions for healthy side foods besides what I already pack would also be welcomed. Thanks for your ideas in advance.

How about a thermos of soup or chili? He can pour the soup into a cup and drink it, and can stop for a quick chili lunch somewhere.

Whole wheat or whole grain English muffins with organice apple butter

Homemade trail mix (you can double, triple, or quadruple the following recipe, which I modified from the pocket-sized Abs Diet book):
2 cups raw, unsalted almonds
1/3 cup rolled oats
cooking spray
2 Tablespoons honey
1/2 teaspoon cinnamon (but a little more doesn't hurt)
1 cup Orange flavored dried cranberries (Craisins)
Chopped dried apricots (I buy the whole ones and then cut them up - just use however much you like)

Mix the almonds and oats, then spray with cooking spray (3 shots, stirring after each shot). Stir in the honey and cinnamon. Spread the almonds in a single layer on a cookie sheet. Bake in a 350 degree oven for about 15 minutes, but keep an eye on them and make sure the oven rack isn't too low - these will burn easily (I know from experience). I suggest "stirring" the almonds about halfway through roasting. Once the almonds are cooled, transfer to a bowl and mix in the cranberries and apricots. I store my trail mix in cleaned, empty peanut jars or tupperware containers.

I get a large package of skinless chicken drumsticks, marinate them, cook them all on the grill, then throw them in the refrigerator. They are great for a meal-on-the-go or a quick snack.

My Mom has made my lunch for my Dad for about the last 30 years and he doesn't always eat "healthy", but she does what she can. :)
Here are a few that she's used to get him eating healthier.

You could try a few different sandwich fillings, such as:
Egg salad (made with mostly egg whites, chopped peppers, celery, olives, and light mayo), you could even mix in a little tofu and he'd probably never notice :)

Puree beans (like garbanzo beans) with a small amount of light mayo and dried dill weed or chives--again, add chopped celery, scallions, etc.

I know that she has also done chicken salad, baked and marinated chicken, cut up with veggies in a pita, and even veggie burgers.

I also second the suggestion for soup or chili in a thermos, especially welcome in the colder months, and it's very easy to make a large batch ahead, freeze it in individual portions, and then take it out as needed. You could send a few whole grain crackers and/or light cheese to scatter over the top.

No food suggestions, but I just got a heatkeeper which is a thermos that you can heat it and the food in the microwave, and it is supposed to keep your foor warm for 6 hours. I haven't tried it yet, but it may be worththe $11 investment.
