The weird Butterfinger recipe

... is really pretty darned good! Thanks, Mattea! I'm still wondering how dates could turn into something that tastes like a candybard, but I'm not complaining. I've never even bought dates before - I actually looked at the ingredients to see what they were...like prunes are plums...gosh, they are just dates.

Anyway, thanks for expanding my taste buds! :9
 
I totally can't wait to try this out! I went to the store and bought dates and vanilla extract (actually, they only had vanilla essense - hope it's the same thing..?). Come on weird Butterfinger - tomorrow!! :9

I'm so glad that you liked this! DH and I have been having this for dessert pretty much every night for about a week now, lol! I know, dates+oats+vanilla+pb=butterfinger, who knew? I remember the first time DH and I bought dates, along with dried figs, we've been hooked ever since.

This recipe has been my shining star this week! :7 I've had a really busy one and have finally gathered the ingredients...now if I can just find a minute to make it! My visiting mom is leaving next week so we've got family dinner this and friends get-together that, on top of a busy work week. Anyway, I will definitely be trying it later on this week and will tell you how it goes!

Say, how much should I mash up those dates? I'll take the pits out, cut them up small and then smoosh until it's like a jam before I add the other ingredients?

As you can see, this is a VERY important project - I must do it CORRECTLY! :D :D
 
I second the request for a link:) Mattea, between this recipe having oats and your fantastic idea of putting oats in cottage cheese, I'm inclined to ask 'what else are you putting in you oats?!';-) :D

August-Don't just find the time, make the time;-) Yes, just take the pits out, cut into chunks with a knife and then mash until they form a thick paste. Then add the other ingredients and mash until evenly mixed.

Lori-Yes, you've noticed the trend I love oats and often eat steel cut or old fashioned right out of the canister. But I have put them in yogurt (pretty much the same deal as the cottage cheese, they get slightly softened), I've also put them in egg white omelets -egg whites, cocoa powder, stevia, protein powder, 1/4 cup oats, vanilla, spread with pb-this used to be a favorite of mine as well. I've mixed them right in with other cereal or just let them soak in vanilla soy milk and made muesli out of them. I've put them in apple sauce, fruit purees, and even mixed-and well this is probably the weirdest one, but oh so good, fresh fruit cut up, walnuts, oats, soymilk, vanilla, stevia, and beans, yes that's right beans. When you think about it, beans are pretty neutral and they sweeten up amazingly-this is a great snack and full of texture, fiber, and protein!

Okay, now I officially have to go make this

And your other recipes sound great, too - like things I would totally get into. Are your other concoctions listed up somewhere? I'd LOVE to get hold of them!!

I bought steel-cut oats a while back, made them once in my microwave (result : hours of scrubbing out my microwave while quietly cursing to myself and not enjoying the chewy texture of the oats) and once on the burners (result : hours of scrubbing out my burner while loudly cursing to myself and again not enjoying the chewy texture of the oats). The cooking thing aside, I just didn't really much get into the texture of them. I guess the thing I like about oatmeal is that it's goopy. So now my big tin of steel-cut oats are just sitting in my cupboard. You eat them raw? Soak them in soymilk?

I want to hear more! :*
 
August, if you are still looking for what you can do with your steel cut oats, Alton Brown made this at some point and someone here pointed me to his Overnight Oatmeal recipe. I've tried it, and enjoyed it. You're looking for goopy? Here it is!! :p

1 cup steel cut oats
1 cup dried cranberries
1 cup dried figs
4 cups water
1/2 cup half-and-half
In a slow cooker, combine all ingredients and set to low heat. Cover and let cook for 8 to 9 hours.
Stir and remove to serving bowls. This method works best if started before you go to bed. This way your oatmeal will be finished by morning.

Amy that sounds delicious....I'm going to substitute either soy or almond milk for half and half and make it in my rice cooker (it has a porridge cycle).

If you soak dried apricots with currants in the refrigerator overnight in a small amount of soy milk (just enought to cover it) it also makes a sweet tasty treat. You can add it to your fruit in the morning. It is absolutely incredible with strawberries and cherries.

But I have heard about boiling water and putting the steel-cut oats in and letting them sit until morning and then reheating them up in the morning...maybe I'll try it out with soymilk and raisins (or dates, 'cause I've got those now! }( }( }( )
 
August-Here are the "recipes" for a few of my favorites. Let me know if there's anything else you'd like!
I like steel cut oats raw, but soaked in soymilk over night (especially mixed with old fashioned oats) is an awesome base for muesli.
You start with 1/4 cup. old fashioned oats
2 Tbsp. steel cut oats
1/2-2/3 c. of soymilk
dash vanilla
1/2 tsp. stevia
Then add in frozen fruit or add fresh chopped fruit in the morning. The oats will have absorbed most of the liquid and become much softer, but not exactly "goopy"

1 c. plain yogurt (or 1/2 cup cottage cheese)
1/2 c. old fashioned oats
dash vanilla
1/2 tsp. stevia
2 Tbsp. soy milk
1 tbsp. walnuts
chopped fruit
Beans can be added to this as desired

4 egg whites
1 Tbsp. protein powder of choice (I usually used Vanilla, unsweetened, protein powder)
1 Tbsp. unsweetened cocoa powder
1/2 Tbsp. stevia
2 Tbsp. old fashioned oats
2 Tbsp. oat bran (or all 1/4 c. oats)
dash vanilla
1/4 cup soymilk
Whip together with fork
Spray small fry pan (one that you have a lid for) with non stick spray heat on med. high and add to pan. Reduce heat to about med. Cover and cook for about 4-5 or until edges are set enough to flip without breaking. Lift "omelet" with spatula and (here's the tricky part) give a little 2nd spray to the pan while holding the omelet on spatula. Then flip, cook for about 2 more min. and slide onto plate. Enjoy with natural pb and a chopped apple or pear

Mix 2-3 mashed bananas with
1 tbsp butter or butter substitute
and 2 tsp. stevia
Then add in:
1/4 c. oat bran
1/4 c. oats
2 tbsp. steel cut oats
1/4 c. whole wheat flour
2 Tbsp. soy milk
vanilla
salt
1/4 tsp. baking powder
1/4 tsp. baking soda
1 and 1/2 tsp. ener-g egg replacer or 1 egg white
Add in 1 c. blueberries and spread onto greased cookie sheet and bake in 350 degree oven for about 20 min. These are delicious "Banana-Blueberry Scones"

1/2 c or one serving whole fruit cut up
1 tbsp walnuts,
1/4 c. oats,
2 Tbsp soymilk,
dash vanilla,
1/2-1tsp. stevia,
1/2 c. beans of choice but my favorites are black and pinto
When you think about it, beans are pretty neutral and they sweeten up amazingly-this is a great snack and full of texture, fiber, and protein!

I'd like to chime in and say I made this recipe and few days ago and I loved it!! I wanted to use up all the dates I bought, so I multiplied the measurements by 8 and made a ton! I threw it all the the food processor (sorry! I'm too lazy and impatient to mash all those dates!). I took it out of the processor and formed it into a big ball, then I rolled in out and made little bite sized balls. They hold their shape perfectly. It made about 36 balls and I calculated that they are about 25 cals apiece. Perfect little snacks/desserts. Anyway, I just love this recipe and I wanted to let you all know!

I love your idea of rolling them into little bite-sized treats, they are like TRUFFLES!
You could roll these in shredded coconuts, chopped nuts, cocoa powder, raw sugar, cooked brown rice, oh my!
