August-Don't just find the time, make the time;-) Yes, just take the pits out, cut into chunks with a knife and then mash until they form a thick paste. Then add the other ingredients and mash until evenly mixed.
Lori-Yes, you've noticed the trend I love oats and often eat steel cut or old fashioned right out of the canister. But I have put them in yogurt (pretty much the same deal as the cottage cheese, they get slightly softened), I've also put them in egg white omelets -egg whites, cocoa powder, stevia, protein powder, 1/4 cup oats, vanilla, spread with pb-this used to be a favorite of mine as well. I've mixed them right in with other cereal or just let them soak in vanilla soy milk and made muesli out of them. I've put them in apple sauce, fruit purees, and even mixed-and well this is probably the weirdest one, but oh so good, fresh fruit cut up, walnuts, oats, soymilk, vanilla, stevia, and beans, yes that's right beans. When you think about it, beans are pretty neutral and they sweeten up amazingly-this is a great snack and full of texture, fiber, and protein!
