Sweet Potato Casserole
8 large sweet potatoes, cooked and mashed ( I bake mine, it is much easier)
3/4 stick of butter
3/4 cup of sugar
1/4 cup of milk
2 eggs
1 tsp. vanilla
Mix altogether and put into greased 9x13 casserole dish
Topping:
1 stick butter at room temperature
1 cup brown sugar
1/2 cup flour
1 cup chopped pecans
Mix first 3 ingredients altogether until crumbly, add pecans and put over the sweet potatoes and bake in a preheated 350 oven for 30-40 minutes or until edges are bubbly and top is browned.
This is my neighbors recipe. These are so good. Everyone asks her for this recipe. Maybe this will help with measurements.
