Slow Cooking Oatmeal

The more processed a food is, the faster it is digested. More whole foods take longer to digest and thus don't cause spikes in the blood sugar. For example, white flour is more quickly digested than whole wheat flour, and whole wheat flour more quickly digested than wheat berries (whole wheat).

Everything you ever wanted to know about steel-cut oatmeal...

Don't forget to put on low heat and stir occasionally. I burn the pan every single time. Its easy to made extra - usually 4 C water/1 C oats will make a lot- I usually eat 1/3 of what it makes and add some skim or soy milk and a little splenda. I've also heard you can make it by putting in a thermos w/hot water and just let it sit overnight.

It is very filling and you won't feel like eating again for a long time- not to mention it does give a nice boost of energy.

Kathyrn,

I understand what you are saying about processed foods, but I don't think instant oatmeal is processed, just cut finer.

Also, the nutritional value between white and wheat flour is different, where as the different oatmeals all have the same nutritional values as I showed above. It's hard to compare the two thoughts for this reason. At least to me.

But being finer cut is a form of processing. Not the typical sense of the word, as nothing is being removed, but it is still processed to some extent. I just know that when I replaced flour, and cereals made with flour, and quick oats with whole grains (even whole oats) I lost weight while eating the same amount of food.

I've been looking for steel cut oats for a while now but haven't found any store in my area that carries them. I love the regular rolled oats though. I cook them in egg whites for an added protien breakfast (1/2 c rolled oats, 1/2 cup water, 4 egg whites, cinnamon and splenda). I also just add a heaping tablespoon raw oats to yogurt. Oats are great stuff!

I'm going to comment on the statement that old fashioned oats take an HOUR to cook? Where have you guys read that? I keep both old fashioned and quick-cooking on hand at all times. My kids prefer the quick so that is what I make the most but if I'm out I will substitute the old fashioned variety and it doesn't take any longer to cook. Now, I'm cooking mine on the stove top...the old fashioned method so maybe that's the difference but geez...if old fashioned took an hour to cook no one would eat it!!

Here's my cooking method: Place water in pan and bring to a boil. Add oats (either type) and cook for a couple of minutes. I let my oatmeal cook until I see the mixture thicken because I like it very thick. Then I turn off the burner and place the lid on the pan and allow the mixture to set for a couple more minutes. You can add cooking vanilla at this point for more flavor.

Then, remove lid, spoon into warmed bowls and enjoy with some brown sugar sprinkled on top!

IN RESPONSE TO 40SOMETHING'S DIRECTIONS FOR COOKING OATS -- YOU MEAN REGULAR OUAKER OATS RIGHT? NOT THE STEEL CUT OATS (IRISH OATS)CORRECT? TO MY LIMITED EXPERIENCE THE STEEL CUT OATS NEED TO COOK QUITE A BIT LONGER AND CAN EVEN BE SOAKED FOR A QUICKER COOK AS THEY ARE QUITE "HARD".

Right. The steel cut look different, also. I think Quaker has 5 minute and 1 minute Oats. Steel cut takes at LEAST 45 to an hour.

Steel cut takes at LEAST 45 to an hour.

I don't know how you're cooking them, but they usually take about 30-35 minutes. Whole oats might take 45 minutes to an hour, but I've never met a steel cut oat that did (maybe it just feels like an hour!)

My steel oats only take 20 minutes those are the directions on the package, maybe that's why they don't taste good, they certainly don't ever look like they're cooked. Don't you think they look like BIRDSEED?

Stupid Question - Is it possible to cook whole oatmeal in a rice cooker the same way like the long grain rice?

Susan L.G.

Uncooked, they definitely do look like birdseed!

When they are thoroughly cooked, they are chewy (but not crunchy) and have a very pleasant texture (IMO).

That's a good question, it would be easier...I have one, never have tried that. Might.

Martha Stewart did something with Irish oats once I saw where she left them to soak overnight on the stove top, and then it was pretty speedy in the morning. Don't remember anything other than that. I do know it was Irish Oatmeal though.

I have been adding a little bit of canned pumpkin pie mix to my oatmeal, it is yummy!

My husband is from Ireland and when his father was visiting us, he would put his oatmeal (steel-cut) and raisins in a bowl of water to soak every night. That way, they cook very quickly the next morning...
