Quick Lunches?

I run a small daycare in my house(as some of you already know), but find it really hard to find quick lunches to make for myself. I would literally have to whip it up within 5-10 minutes. I usually have leftovers or salads, but really need something different. I am not too picky. I don't really eat soy products and am not a huge fan of beans. Other than that I am up for any suggestions.

Seriously, I like to wrap things up in WW tortillas. It's quick and easy to eat. I'll throw in cheese and salsa and avocado and stick it in the microwave for a few seconds. Or lots of veggies. Roll it up and presto! I also like to cook up batches of brown rice or WW pasta and then throw in a bunch of veggies. You don't even have to warm it up.
 
Have you ever tried a simple stir fry? I make them fairly often. It's a great way to use up any vegetables that are about to go bad and the grocery store always has packages of stir fry meats. This is definetly an option for the time frame you mentioned.

Of course, these ideas are assuming you are not vegan...
 
I am a huge fan of leftovers for lunches because the work is already complete! Whenever I make chicken, I make extra and throw it over salads, mix with mayo, etc. Make some extra portions at night to us during the week.

Other than that, I sometimes take an hour on a Saturday out to make a few meals that I can use for several lunches during the week and freeze the remaining portions for another time in individual servings. That way, when I forget or don't have anything for lunch, I throw the container out on my counter and microwave it for lunch. Plus, that way, you get vareity b/c you have lots of different meals in your freezer. Here's some ideas:

turkey chili
veggie lasagna or any kind of pasta dish
meatloaf (turkey, beef or other)
soups
Jumbalaya

Other quick options are:
veggie burger
tuna melt, toasted sandwich
Fantastic soups (heathy "cup of soup" type instant soups)

I usually have what I refer to as a "concoction." I take frozen raspberries, blueberries, strawberries (fresh if I can get them) and microwave them until they are thawed. Then I add a handful or two of granola cereal and a container of yogurt - my favorite is raspberry. That fills me up for the afternoon and it's a nice change from vegetables or sandwiches.
 
A yogurt and berries with granola fills you up for the afternoon? That's crazy. I have to eat about every 3 hours or I'm ravenous. A yogurt and berries would last me about 3 minutes.
 
i eat cottage cheese mixed with yogurt a lot of times for lunch!

i do tuna and brown rice
ww tortilla spread with humus or cream cheese with raw spinach and turkey lunchmeat. if i have alphalfa sprouts, i stuff those in too;-)

I do a lot of "wrap" lunches too ... I'll use leftover veggies, hummus, soy burger etc.. Also I like grape nuts cereal, yogurt, and some sort of fruit mixed all together...easy breezy and yummers!

Hmmm...I'm not as interesting as some of the folks on here...but I often do lean turkey sandwiches on whole wheat bread, pickles, fruit. Later I have cottage cheese mixed with fruit, raw veggies, sometimes tuna and whole wheat crackers. Gotta have my pickles, man. Don't even try to take those away from me! :p

Lately I've been having WW or low carb, ww tortillas stuffed with half a sweet potato, black beans & salsa or half a sweet potato with grilled chicken breast strips and salsa. Or I stuff a ww tortilla with tuna and lemon juice which doesn't sound all that great but it is pretty decent.

I don't have much time for lunch. I usually just grab a small tub of low-fat cottage cheese, then maybe have a Luna bar and a cup of decaf. It works for me.
 
I know you say you don't eat soy products, but tempeh is sooo good for you, so I'll post this anyway.

I was getting ready for work this morning, then realized I didn't have a lunch to take!

I had some thawed (precooked--essential, or you have to steam it 20 minutes) tempeh, so I mashed that up, added some onion powder, some poultry seasoning, some chopped celery and some vegan mayo and mustard, and had myself a "mock chicken" salad to take (maybe took more than 10 minutes, but that was because of the celery chopping).
I added some sliced cucumbers on the side, and that was good enough for me!

I also have enough to use for tomorrow's lunch as well (I don't mind repeats!)
 
My quick lunch yesterday was oatmeal - you can put dry oatmeal in a baggy with non-fat dry milk and splenda, then throw it in a bowl with water and microwave when it's time to eat. It was faster then messing with the salad which I later ate at 4:30 when I had more time. Needless to say, I carry a lot of food with me to work. I had enough for 3 meals yesterday.
Just Do It! :)
