Protein Pancakes with Oatmeal

I got the recipe for these from the yayas but these are so good I'm posting it here for those of you who don't visit that forum.

Mmm...I made these this morning. Wow, these are great!! Really I like them better than regular pancakes. I'll be making them again for sure. Here's what I did:

1/2 c. Quaker Old Fashioned oatmeal (non instant / dry)
1/2 c. 2% cottage cheese
4 egg whites
2 splenda packets
a handful of fresh blueberries

Blend it all up in a blender, consistency will be like batter. Cook on a non stick skillet with Pam cooking spray...they cook remarkably just like pancakes. I had a little s/f syrup on the first 2 but ate the rest plain (it made 5 medium sized pancakes). I added up the nutrition info as follows:

Cal 332
Fat 6
Carbs 39
Protein 32
Fiber 5
 
I love protein pancakes, I follow BFL and have them a few times a week.

Another option, I add a dash of Cinnamon & vanilla to the batch! Never added fresh fruit though, def. going to have to try this tomorrow...YUM!! :9

Funny, I just posted these y'day on the Clean & Tidy thread! I love them!!! I don't add the splenda, but do add cinnamon or pumpkin pie spice. I use 1% cott. cheese and my nutritionals were similar but 300 cals for the recipe. I top mine w/ Naturally More PB or make them w/ blueberries. Delicious!!
 
Is that 332 calories for the batch, right? Not per pancake . . .

Don't want to assume as you know the saying that goes with that word.

Sounds healthy! I am going to try this weekend. And we are going blueberry picking on Saturday, so it is perfect timing.
 
Yum, these sound good. Do you think I could substitue Egg Beaters for the egg whites, or would that not work? I don't usually keep regular eggs around any more, because then I'm tempted to eat them all the time. :9
 
Sweet, I'm totally making these later this week. I'll bet they'd be good with some mashed banana and walnuts as well, instead of the blueberries!
 
These are yummy! I made them for dinner tonight and they are quite filling. I did eat all of them, which seemed like a lot...it made eight pancakes, but I dropped one on the floor. The dog like 'em too!
 
These sound really good. The only thing throwing me off is the cottage cheese. It's not one of my favorite things. Will I notice it in the pancakes?

Jacque, you can't taste the cottage cheese at all. When it blends it is perfectly smooth and I think it really just helps with the texture of the pancakes. I won't eat cottage cheese stand-alone either.

Hi,

I made these this morning but they did not turn out well.. I think I may have put too much liquid in them.. they were mushy and the inside never cooked.. I used the egg whites you can buy in a little carton. 1/2 cup and 1/2 cup of blueberries.. can anyone who made these successfully let me know if this is what I did wrong? the flavor was great, just bad consistency.

Hi Deb,

I have made these pancakes for years and have tried them many ways. I have found that adding fruit to the mix before you cook them does make them very soggy and mushy. Try adding the fruit after you pour them onto the skillet, or just put the fruit on top after they're done(that's what I do). Hope this helps, because these pancakes are soooooooo yummy.

Umm...WOW is all I can say. I made these today for breakfast and they were amazing! My husband turned his nose up at the idea of them, but I might have to make him at least give them a try next time. Thanks for the recipe, this is going into heavy breakfast rotation at my house!
