Pentagenarians & Beyond: Week Beginning 8/5

Rode our regular road ride, 2 hrs 20 min. pleasant but will be very warm later in the day. we are in midst of a heat wave. it is very dry. California isn't the only place with potential fire problems.

I haven't had much exposure to fresh figs. I don't know what to do with them! I know fig newtons and also the fig preserves we talked about earlier, but so pretty limited. swiss chard leaves get really big. the ribs can get unpleasantly tough. I used to make "cabbage" rolls using chard leaves. tastes a lot like spinach when cooked, maybe a little sweeter. we end up getting a huge load of fresh vegies in summer so that I can't possibly use it all.

Carolyn, I did that express premix quite a lot. Also I would do the abs mix as an add on just for extra abs. I remember the first time I did the whole workout through, I thought it was so hard. It is not that bad to me anymore. Still the express mix is much more doable without dread.

Valerie, I love cabbage rolls. I have made a fig filling for oatmeal bars that is really good. I miss my daughter not planting her garden this year because she would bring me things from her garden. They had so much this summer with the wedding and changing in their household with both daughter's leaving. Younger one going to be staying in the dorms. She just did not want to spend the time getting it all planted and dealing with it with so many activities to keep up with. The only thing I could grow would have to be potted veggies as my yard is small. I tried a tomato plant in the back corner once and got one tomato that something ate half of before it turned red. I gave up.

Yesterday I did Live Low Impact HIIT, 34 minutes, 212 calories.

Valerie, I do remember you have had should issues in the past. I thought you recently re-injured etc. Glad it is ok. :). Yes, the ride was very intense. My cousin said she would do it again, the actual riding was enjoyable. It was the logistics and daily schedule that was not so much fun. That and the camping...LOL...she is not a camper at all. .

Diane Sue, great workouts. Glad you are enjoying the Live workouts. Try the "Move It"...for cardio. That one is fun. I have frozen brussel sprouts. Would like to try that salad. Good to expose your grandson to some old fashioned cartoons. I watch some of the newer ones when I am babysitting my friends grandchildren, and they don't seem that great to me. I wish they had a channel that had all the old ones we used to watch. My brother has a container garden with all his veggies, tomatoes, Swill Chard, basil etc. Nothing planted directly in soil. It is so nice

Carolyn, you do a good job on your food choices. I need to improve on that.

Brussels Sprouts Salad from Karma Chow Ultimate Cookbook
4 servings
1 pound brussels sprouts ends cut off and thinly sliced
1/2 cup almonds (smoked or roasted)
1/2 cup dried cranberries
1 shallot diced
Lemon vinaigrette (recipe below)
Sea salt and pepperbto taste

Blanch the brussels sprouts in boiling water for 3 minutes, drain and set aside to cool. Place in bowl and add the almonds, cranberries,and shallots. Toss with vinaigrette. Season with salt and pepper. Salad gets more flavorful when refrigerated over night to allow the flavors to meld.
Lemon Vinaigrette
Juice of 1 lemon
2 Tablesoons extra virgin olive oil
3 Tablespoons Brown rice vinegar
1 tsp agave nectar
1 Tablespoon Dijon mustard
1 shallot minced finely
Place in shaker or blender till well mixed.

Salad 210 calories, total fat 10 grams, saturated fat 1 gram, Chol. 0 mg. sodium 30 mg,carbs 28 gm, fiber 7 gm, protein 8 gm
Lemon vinaigrette 80 calories, fat 7 gm, sat. Fat 1 gm, cho. 0 gm, sodium 90 mg, carbs 5 gm., fiber 0, protein 0

I have switched nuts in this dependant on wgat I had on hand. I will use maple syrup instead of the agave. My agave nectar hit the trash can recently. It was waybpasr expiration date and I dont use it antmore anyway. I need tomsee if I can sync these cookbooks into my itunes account. There are several recipes that I have used for alot.
 
Thanks Diane Sue. I will save these in my recipe folder on my computer. It looks really good. I like nuts and cranberries. I would probably try walnuts. Also never bought agave, and really like using maple syrup as a sweetener.

Quick question: if you use frozen brussel sprouts, do you still blanch for 3 minutes?
 
Deb, no I don't blanch the frozen ones. I just thaw them and slice them. Frozen veggies are often already blanched before packaging. It makes the prep easier :)
 
I think I would like that salad too, especially with fresh sprouts. I might use dried cherries rather than cranberries. both are sweetened but I like cherries better and I have an extra bag of them. I use a lot of rice vinegar... both seasoned and unseasoned but I have never seen brown rice vinegar. is it seasoned or not?

I have honey, agave and maple syrup. use them interchangeably mainly salad dressing. the main benefit of agave for me is it doesn't crystallize like honey does. even in the summer I need to liquify honey in a tub of hot water to melt it from a solid lump. I don't like to microwave honey since it is always in plastic containers.
diane sue, you are right on the blanching. its necessary to briefly cook vegies before freezing. easier done commercially than with a home freezer. the commercial flash freeze works better than home freezers. I've tried before.
Deb too funny... auto correct keeps making swiss chard into 'swill" chard.

going to be a hot one again today. I am tired of summer before it even starts. at least it's cooled off at night. my least favorite season except for the wonderful fruit and vegies. we got our first corn yesterday. it is so delicious. if we didn't grow it we would not get any. the fresh stuff is all GMO vile supersweet crap that is inedible. I still get frozen corn that tastes like corn, but I wonder how long that will last.
 
This morning I did High Step Challenge, a timesaver premix, for 56 minutes and 288 calories burned. My average heart rate was 117 and maximum heart rate was 154. The full workout is 68 minutes. I haven’t done this one in years and I had forgotten that I like it quite a bit. Cathe’s older workouts were longer, but they usually include core work. Now the core is a separate workout.

Deb, nice job with Live Low Impact HiiT. Did it feel okay on your hip?

Diane Sue, the brussel sprouts salad looks good. I might try it soon with fresh brussel sprouts. I always prefer fresh vegetables, but I buy frozen broccoli for times when I need something quick. I don’t like the texture of most vegetables once they have been frozen.

Valerie, I will add fresh figs to my salads and I like to eat them plain too. I never have very many so there’s not much to do with them.

Today I did Cathe Live Hard Strikes Low Impact Boxing, 61 minutes, heart rate average 130, max 164, 4,561 steps, met 5.9, 391 calories. I don't know who has done this since it is an older one, but she only does kicks once in the workout, most work is boxing with some lower to keep the heart rate up, then heavy bag at 30 minutes, and at 38 minutes some strength work and then abs. She uses 10# dumbbells for some of this. Too much overhead stuff for me since I just used weights yesterday and some the day before. I put down the 10's in one part and picked up 8 and one I just put down the weights and did speed skaters till they were done. More push ups. I am tired of push ups. I like it, but next time I will skip the strength stuff. I wanted to do weights tomorrow. I followed this with Coffey Fit Raw Core Moves, (all with the stability ball), 24 minutes, met 3.5, heart rate 99 average, 123 max, 224 steps, 93 calories. Total workout time was 85 minutes, 484 calories.

Deb, I am going to use walnuts in the salad when I make it today. That cookbook had some delicious recipes in it. There is a kale salad that I always liked that had a chipotle creamy dressing (no milk or cream in it) that is really good as well. I am not very good with itunes anymore as it has been years since I used it much. I am going to try to get these cookbooks off my old tablet before it dies and onto my laptop in my itunes account. I never used the cloud before so things have not transferred well for me.

Valerie, I often buy the dried cherries or tart cherries or get cherry infused cranberries. I see Paleo recipes that call for unsweetened dried cranberries. I have not seen any anywhere. Somehow, I don't think they would taste as good. I like to buy dried blueberries and use them in salads occasionally. Since Sprouts has been having blueberries on sale a lot, I have been putting them in my salads along with the dried cranberries. I try to buy mainly organic and non gmo products. It is not always easy. I don't eat the baked goods often, but I buy Montana flour that is non GMO for my baking. Some of the produce that is US and organic at Sprouts is not as big and pretty, but I prefer it for health reasons. Besides that can be a big problem for causing auto immune disease and fighting it. I have a tuna steak recipe I am making for dinner that has you grill it along with some baby bok choy and limes. The limes are squeezed to make a sauce the is drizzled over the bok choy and tuna. This is for me. My husband would never touch it.

Carolyn, I only buy the whole green beans frozen and sometimes broccoli and asparagus. Schwan's used to have the best frozen asparagus spears. They were large and nice. I don't know what is up with the skinny stringy asparagus in the grocery stores lately. I used to like that workout. I would do the whole thing and repeat the cardio sections twice each :) Time always seemed to move quickly with it.
 
I gave up on trying to get my cookbooks from ibooks on my computer. You can't transfer them. I had problems before and stopped buying them and started using the Kindle app. I had a Sony reader and most of the books I purchased from Sony are on Kobo. I am just going to have to type of the recipes I want or see if I can copy them, which is doubtful. By the way, anyone that uses that recipe, the Karma Chow recipe and dressing is already in MFP.
 
I did a rock /sock premix for 35 min, then core 1 and 20 knee pushups.

It baffles me that anyone can cook from a recipe on an electronic device. I am that messy? I want it printed on paper and in a plastic sleeve. nothing electronic and sensitive should be near the cooking zone.
I would think unsweetened cranberries would be a whole new level of sour. wow. I like tart things but not that tart. I shopped today and was thinking of figs but didn't see any. I don't know when the season for them is, but I would try fresh ones. I used to use dried figs in a home made chewy bar but have not made them in ages.
I am spoiled. only eat home grown green beans. they are easy to grow here and don't need much space. the trick is not letting them get big. picked when small and thin, they cook in about 2 minutes and are amazingly good. some things are fussy, need spraying or covering , or take a lot of space but beans are easy. they taste so much better it spoils you for store bought ones. at least here, they never get any pests and can be harvested for at least 2 months if you stagger the planting times.
 
I made the black pepper grilled tuna and bok choy recipe for dinner. It was delicious. I will be making it again. The lime, walnut oil, dijon, scallion drizzle was really good over it. I was surprised how flavorful it was without salt added. Loren Cordain encourages not adding salt to most things. I read reviews and it seemed most people really loved his recipes. This is another fast Paleo cookbook. The only complaint in the reviews was some things take extra time because they have an extra recipe attached. It did call for a dijon type recipe in the book, but I just used dijon mustard that was gluten free.

Valerie, I print out lots of recipes, but have not organized them like you have. They stand in a pile in the cabinet and half the time I just print another one up if I can find it so I don't have to hunt for it. I have purchased a lot of cookbooks in Kindle. It is less clutter with so many cookbooks sitting around. Also, I can sit down while watching television and go through the cookbooks all in my tablet to find items that I want to try. I just set it up on the upper counter where I can see it while I am cooking. I get the cookbooks and paper print out dirty. I have a habit of dropping or knocking something over. I just do not have a place handy to store cookbooks. I have a shelf of them upstairs and I do not bother going up there to look for one. I would rather look online for the recipe.

Good morning ladies...

Been getting some good workouts in...my usual mixture...Lekfit, BBS, SB and a few Raw workouts. Diane Sue...one of the raw workouts was Kickboxing and Contouring. I loved this workout. Now this is how I love to work my core!

Been insane at work trying to meet all my deadlines for the conference since I am out these 2 days. Then yesterday my card transmission decided to act up. WTH? I now have a rental car. Omg the stress!! Go away! My workouts keep me sane I will say! We fly back on Sunday then head directly to the Cape. So I need to be packed this morning for the funeral and also car needs to be loaded for our vacation. We had planned to bring the bikes but now are unable to. Can’t leave the bikes on the racks at the airport!

Thank you for all your kind words and support. My brothers and I were fortunate to grow up with 2 mothers. We have been saying and smiling knowing my mom welcomed Madeline with open arms. Best friends are hanging out having coffee together once again. This warms my heart.

I’ll catch up on posts as soon as I can....need to start loading the car!

Lori, what a beautiful person, Madeline must have been. It looks like she touched many lives. My favorite color is purple too. The first car we bought was a purple Pinto. Lol.
Oh, no, on the transmission. I hope that it can be repaired without to much cost. You have a lot going on. My heart goes out to you. I loved Kickboxing and contour. Kelly has what looks like another strength workout that she just filmed. Kelly does manage to hit the core well in a lot of her workouts.
 
Lori what a lovely memorial. she sounds like a delightful person who lived a good life. bummer on the transmission issues. we have not had good luck with those.

I just got access to slides from the memorial for my friend who died of pancreatic a year and a half ago. I could not go to it since we had already committed to a family wedding, and always felt bad about that. it was very interesting to see all the places she and her husband went. they were both good photographers. he put together an amazing slide series. He has gone back to favorite places to spread her ashes.

diane sue I'm not that organized.... don't want electronics destroyed in my kitchen. I've tried a lot of systems to keep track. loose pages in plastic sleeves in hanging files work best for me. I have cook books but don't use them much anymore. I used to keep entire magazines with recipes flagged but it was too hard to look back and find anything. I did a big purge years ago and dumped massive magazine stacks, pulling only a select few recipes. too cumbersome, and magazines are mostly ads now anyway. most everything is in a single bankers box in pendaflex files. it was work at the time but is efficient now.

I have paper and electronic recipe files. I have an app on my iPad where I keep recipes that I download from the internet. It keeps me from having to repeatedly search for a recipe and forgetting which one I used. I love it and it’s so handy. I keep the iPad far enough from the food preparation that it doesn’t get dirty. My daughter gave me an acrylic shield similar to a cookbook stand, but I never use it.
