Need Help with Breakfast Ideas

One of my New Year's goals is to try to eat breakfast. I have IBS and it's usually worse in the mornings and alot of things can upset my stomach, such as protein shakes, and most cereals. I'm not really a fruit eater except the occasional banana.

I get bored with yogurt but it's quick and easy. I have to be at work by 7am most days so I need something quick. I don't eat lunch until 1pm and rarely have time for a midmorning snack so anything filling, but not heavy for my stomach, would be great.

Anything breakfast ideas you can share would be great!!

My breakfast of choice right now is a one egg spinach omelet and one slice of whole grain bread (Alvarado) with almond butter. Cup of tea.
 
I make an amazing breakfast sandwich. One slice ezekial bread (also have used ezekial English muffins and tortillas), egg whites, ham/Canadian bacon/chicken sausage etc, jarls berg slices cheese, avocado, spinach, tomato and onion
 
I'll have to try out peanut butter again, in the past it's not a taste I've liked.

I appreciate the ideas. I'll try a few out on the weekends, but during my work week I have about 5-10 minutes to prepare and scarf down breakfast so making omelets etc isn't something I'll realistically have time for most mornings unfortunately.
 
Sometimes I'll cook up buckwheat (gluten free) the night before. Then in the am put a serving size into a microwaveable bowl with almond milk and heat it up. I usually put some kind of fruit on top or a bit of stevia.
 
The cottage cheese muffins look great too (see link at below egg muffin recipe). Has anyone tried them? Thanks for this link.

Have you tried almond butter?
 
I like to make a batch of steel cut oats in the crock pot. I add water, almond milk and/or juice depending on what else I'm adding to it. Some of my favs are:

apples/applesauce
fresh cranberries/orange juice
bananas
pumpkin & spices
crushed pineapple/pineapple juice

I'll get a week's worth of recipes from one batch, using 3/4 cup oats & 4 or 4.5 cups liquid as the baseline. I also add flax & chia seeds. Can also add a little honey or brown sugar if you need a little extra sweetness. If I want a little extra crunch, I add a handful of granola after reheating.

Stacy, I really like to eat savory foods for breakfast, foods that most people would consider lunch or dinner. You could bake or grill several chicken breasts on the weekend and keep those in the fridge (or whatever protein you like), have some salad greens/veggies/cooked grains (like quinoa) ready in the fridge to, and just throw it all together for a morning salad. A "morning salad" sound gross at first, but really eggs are a savory food too, so why not a grilled chicken salad for breakfast? :D

Other ideas:
--Hard boiled eggs (prepared in advance) and shmeared on toasted whole grain bread with a little light cream cheese or Laughing Cow wedge and slice of tomato.
--Soup (again, prepared in advance--noticing a theme here?). Eat it at home or pop it in a thermos and take it on the go!
--Overnight oats, a favorite of the food blogger world. This is just oatmeal you put together and let it sit in the fridge overnight. You can warm it up or eat it cold straight out of the fridge. This website has a great tutorial on overnight oats: Overnight Oats

Dear hubby and I premix our own cereal…it feels healthier than buying something processed. We use rolled oats, a combination of toasted and chopped hazelnuts and toasted almond slivers, some kind of dried fruit (lately a lot of Thompson seedless raisins). I top ½ cup of cereal with 1 tbsp buckwheat groats and ¼ cup of blueberries, if available. Super easy and quick, minimally processed.

I also like steel cut oats with almonds and berries. I put the steel cut oats in boiling water (1 part oats to 4 parts water) the night before and then turn off. I then put the lid on and leave til the morning. I cook it for 5 minutes or so while I'm usually doing something else, then add the berries and nuts and eat. I especially like this when it's cold.

The Winter Clean Eating magazine has a recipe for make ahead quiches that would be super easy in the morning. :)

Yes! I love overnight oats! I make a parfait that keeps me full for hours. I usually eat it right before I go to class at 7am and I'm not hungry until lunch which is around 12ish:
-20g or so of oats. Put it in a bowl, add some ground flaxseed (I use 2tbsp), cinnamon, vanilla, and add almond milk or milk of choice to just cover the oats. Cover and refrigerate overnight.
-next day, mix in some all natural pb or favorite nut butter. Put half the oat mixture into a bowl, then put some Greek yogurt on top, then strawberries and blueberries on top of that. Add the rest of the oat mixture on top of your berries, then yogurt, then berries again.

This is my go-to bfast, I love it so much!!
 
quinoa with egg.

I love to make quinoa ahead and have it ready in the fridge all week. It keeps really well.

For a super quick breakfast I take 1/2 cup cooked quinoa and heat it up. I either cook and egg in coconut oil, or to be even faster, put a hard boiled egg on top with a sprinkle of sea salt. Delicious, ultra nutritious, and easy on your digestion. Win-Win.
 
Put some egg whites in a bowl and add a little pumpkin from a can, then add some coconut or almond milk, a couple of tablespoons along with cinnamon and a scoop or maybe 1/2 scoop vanilla whey depending on amount of egg whites. Put in soup bowl sprayed with cooking spray and microwave about 1.5 minutes stopping midway to stir, and watching for it to be puffed and set. I top with greek yogurt or light sour cream.

For something besides peanut butter there is almond, cashew, or my fave sunflower butter.
I have the same thing everyday almost, and it whips up quick:
1 beaten egg thrown in the pan to make an omelet
Add 1/4 to 1/2 cup of beans (kidney, black)
salsa to cover
Whip it on the plate, add ketchup!
Sometimes I add goats cheese!
I use organic foods whenever possible.
The only bread type food I eat is Ezekeil because it has no flour, which is wasteful calories in my opinion.

Also, if you don't like the PB you might like Nutella, which is hazelnuts/chocolate. I find it to be delicious on toast.

Lately I have been enjoying So Delicious Chocolate Coconut milk. It tastes like a milk shake, is dairy free, and has less carbs than milk.
