For anyone who's interested the recipe is one that I made up from several sources, so I "think" that they have about 42 calories (PER MINI-MUFFIN! Because then three is a serving!!!)
Banana Raisin Whole Wheat Muffins (would be great with chopped up apple and a little cinnamon, I didn't do it with this batch b/c I wanted to see how they would come out.
Preheat oven to 375, grease the muffin tins, my batch made 39 minimuffins.
1 1/4 c. whole wheat flour
1 c. oat bran (wheat bran would work too)
1/4 c. ground flax seed
1/4 c. soy flour
1 tsp. baking soda
1 1/2 tsp. baking powder
1/4 tsp. salt
2 egg whites
1/4 c. sugar (or honey, maple syrup, whatever you like)
1/4 c. unsweetened applesauce
1/4 c. skim milk
1 Tbsp. plain nonfat yogurt
1 Tbsp. lowfat sour cream
1 c. mashed bananas (I used 4 small bananas, verrrryyy ripe!)
2 tsp. vanilla
1/2 c. raisins
In a large bowl, combine all the dry ingredients. Then in another bowl beat the egg whites, applesauce, and sugar (or sugar-like product) until combined and just frothy. Then stir in bananas, milk, yogurt, sour cream, and vanilla.
Make a well in the center of your dry ingredients, add the wet mixture to the dry and stir until just combined (don't overmix as that makes for a tougher finished product). Then quickly stir in raisins or any other fruit or nut you'd like. Fill the muffin tins about 3/4 of the way full (and a great tip I got off of foodnetwork's "Good Eats" is to up the temp. on your oven by 25 degrees right before you put the muffins in b/c the extra burst of heat will make for higher, lighter muffin texture).
Mine took about 12 minutes, they get only a little darker then they were when they went in b/c of the whole wheat.
Usually, when I've tried all whole wheat muffins, especially with bran, they come out tough, but all these are moist and delicious. And did I mention the approximately 42 calories each? If my math has failed utterly, please let me know. MIC is too hard to keep sabotaging it unknowingly!
