How do you cook steel cut oats?

SRP

Okay - I bought some, since everyone raves about them. But I got them from a bulk bin, and there weren't any cooking instructions. Help, please!

I have heard of people cooking them (I assume a big batch) in a slow cooker. Does anyone know how to do this? Amounts water to oats and how long to slow cook? I would like to try steel cut oats also but they take too long in the a.m.

Paula

Here are the directions from my can of steel cut oats:

"Into four cups of briskly boiling water sprinkle one cup of oatmeal, stirring well. When the porridge is smooth and beginning to thicken, reduce heat and simmer for 30 minutes, stirring occassionally."

I haven't actually cooked any yet, so I can only pass on the directions. I'll have to try them soon!

I cook them in the microwave, but just be sure that you have a big enough bowl or it tends to overflow. On mine, for one serving you use 3/4 cup water and 1/4 oats and put them in a bowl and microwave for 1-2 minutes. I like them because they are chewy compared to regular oatmeal, although they don't fill me up. I think that maybe I'm not making enough though, so that serving size could be small.

I do them on the stovetop. One cup oats in 2 cups boiling water, lightly salted, if desired. Turn down and cover. Let simmer about 12 - 15 min. Then I divey it up into 3 or 4 containers for the next few mornings.

Just bought them 2 days ago, like you I wanted to see what the fuss was about. They are different from old fashioned Quaker Oats, nuttier, chewier. I absolutely love them. I cook one serving at a time because I am not sure how they will taste a day later warmed up.
I put 1/4 cup oats in about 3/4 cup boiling water and let it boil for a couple minutes until they expand a bit (watch the pot it bubbles pretty high) then I simmer for about 20-30 minutes checking every 5 minutes or so. Obviously I can only do this on mornings I have extra time.
This morning I added about 1/4 cup milk a couple minutes before I took it off the stove, made it creamier.

I have done something similar. Cooking a larger quantity, though (I eat two servings at once!), and putting extras in microwavabe bowls for the next 2 days. Then, the next day, I take the saved bowl from the fridge, chop up the oatmeal (which is now solidified into a mass!)with a spoon, add soy milk and microwave. Then add toppings (flax meal, maple syrup, etc.). The texture actually turns out sometimes nicer, IMO, than the fresh stuff.

OOH that sounds good Kathryn. I will try the bigger batches tomorrow. Since I like to add milk anyway, its a good way to rewarm, thanks!

My goodness, there are a lot of ways to cook these. Thanks for all the ideas, everyone!!!:9

Yup, that's about what I do, Kathryn. I take the bowl of precooked oats to work and microwave it, add some soy milk, raisins, cinnamon, whatever, and have "instant" oatmeal.

I cook mine one serving at a time as well. But instead of 3/4 cup of water I use Light vanilla Soy milk, with 1/4 cup oats. I also add some ground flax seed to the mix as well as some cinnamin. Then I add about 2 tablespoons of sugar free syrup, and top it off with just a little bit more soy milk, maybe 1/4 cup. Delicious!

That's a great idea for work. I never thought of it. (And the big, stuck together mass of precooked oats is probably easier to handle than mushier fresh cooked would be). Wonder how my colleagues would feel about me having oatmeal for lunch! (As if I care!)

I cook mine in a rice cooker. I put in 1 cup oats and 3 cups water at night, set the timer and in the morning I add either spiced apples (Trader Joe's), blueberries or canned pumpkin, cinnamon and nutmeg. Yummy!

I cook rolled oats the same way - my husband really likes it.

I do mine the night before. I boil 4 cups of water, throw in a cup of oats, turn off the heat and put the lid on. In the morning, I just take the lid off, turn the heat on low under the pot and let them heat up. I LOVE LOVE LOVE them and have no idea how I lived before I discovered them:)

Ooh--canned pumpkin! I'll have to try that:9

I make it stovetop. After the oats have boiled and I redcuce the heat to a simmer, I add 1/2 of a chopped apple (per serving). When it's done, I stir in cinnamon to taste and chopped walnuts. I use a little sweetener, too--brown sugar, maple syrup, or splenda if I'm feeling calorie conscious.

I've tried to make several servings to refrigerate and eat later, but it reminds me of pasta that has absorbed all of the cooking liquid--yuk!

I've also tried tomake it overnight in a crock pot and it came out horrible (not to mention that I had a he!! of a time cleaning the mess it made). There are very mixed reviews for the crock pot method.

I occasionally have McCann's Steel Cut Oats (I usually prefer Coach's Oats) and when I do, I make it in the crockpot. They are not as chewy this way, but I choose not do all the extra work involved in the preparation and still get the nutritional benefit.

I do use my super mini-crockpot for cooking the steel cut oatmeal only because I like them hot in the morning and I'm basically lazy;). I found by using crock-pot liners or spraying the crockpot ahead of time and using 1/4 cup oats and 1 cup water with sea salt...there isn't any clean-up at all and it only requires one bowl (lazy Robin). (When I'm ambitious, I sometimes put cut up apples in it the night before and add the walnuts and cinnamon in the morning.....it comes out delicious.) When I'm done, I just put the itty biddy crockpot in the dishwasher (you know, I am certainly not going to wash it by hand). Otherwise, like you said, it would he!! to clean. It's no work at all...just the way I like it:)

HTH for other lazy people like me who like to eat healthy,
Robin :9
