Good Veggie Cookbooks

Plain old steamed veggies don't cut it with me. I'd love to read any cookbook recommendations you have for making some yummy vegetables and/or vegetarian dishes which include photographs of the finished products.

I did some looking at a few bookstores but all of them were skimpy on pictures. Yes, I know I am being picky but I am so much more tempted to try a recipe that I can see. Any suggestions? Thanks!
 
When I was in Roch-cha-cha, Judy showed me her Vegan Planet cookbook. I'm on my way to pick it up at my local bookstore now. It looked wonderful and I know Judy always posts the most amazing sounding dishes.
 
I second the Vegan Planet. I have it - wonderful stuff inside, but I have a terrible time remembering to use it and usually end up with those plain old steamed veggies.
 
Another vote here for Vegan Planet. Although there aren't any pictures in it, the recipes are fantastic. Also, the ingredients are not hard to find and many times you will find you have most of them on hand either in the pantry or fridge. I tend to skip recipes where I have to go out and buy everything. I like recipes where I already have almost everything but maybe need to buy a couple of ingredients.

I haven't tried all of the recipes in this book but the ones I have tried have been great. My husband is not a vegetarian like me but he likes many of the recipes I make out of the Vegan Planet.
 
Anything out there besides vegan books? (although I will definately check that one out--thanks!)
 
I just picked up "The Roasted Vegetable". I love the book. Pictures are nice but what I really love about it is that the veggies go in the oven or grill. They come out crisp - just the way I like them. I roast almost all vegetables now. It's so much easier. I hate (and can't eat) steamed vegetables. Roasted vegetables have such a sweet taste, IMO.

Take a look at this book. Your library may have it. Mine did!
 
I'm with you! I have to have some good pics so that I'm motivated to try different recipes. Here's what I've got:

The Essential Vegetarian Cookbook and Steven Raichlen's High-Flavor-Low-Fat Vegetarian Cooking. Both are good,; I've reached for them time & again. I have another one, which is an E-book, called The Enlightened Kitchen. It also has awesome recipes but no pics, and is a little more work. :9
 
I second the rpasted veggie method. I've never used a cookbook to roast veggiesthough.

My version of roasted veggies:
1.pre-heat broiler
2.line baking sheet with foil
3. spray floi with olive oil. (I use a Mistso device that I fill with good quality olive oil)
4. lay cleaned, cut veggies in a single layer on foil and spray veggies with the olive oil
5. sprinkle with garlic powder or a light sprinkling of kosher salt
6. place under broiler and broil until lightly brown or charred

ANY veggie can be roasted!

This is almost a daily event here.

Vegetarian Times Cookbook - lots of variety, vegan and vegetarian recipes, almost everything I've made has turned out well.


I am going to have to check out that Vegan Planet cookbook - I can't believe I don't already own it!!!
 
I'm sure I probably mentioned this before, so I hope no one is tired of hearing it lol! Everyday Cooking with Dean Ornish is a great one. I tend to be a rather plain eater, and there are tons of recipes in it that I like, especially the blueberry muffins :)

I keep saying I'm going to make something in it but I haven't yet because most recipes look like a lot of work.

For something very simple I like "The McDougall Quick and Easy Cookbook" because (note: it doesn't have pictures) but it has recipes that don't require a ton of ingredients and you can prepare them fairly quickly. It is much more my speed. Don't expect to find any fat in these recipes....mostly whole grains and veggies.
