Feelin' fishy, any recipes???

I have been in a HUGE fish mode for a while, problem is, I am a horrible cook!! Anyone have any really good fish recipes that are relatively simple, that you have tested and loved? (I really don't want to cook unless it is guaranteed to be good!) I would love something different! I LOVE salmon!

salmon.........ok pg 78

herbed salmon fillets

2 tablespoons lemon jiuce
1 tablespoon low salt worcestershire
6(4 ounce) salmon fillets
2 tablespoons soft french breadcrumbs
2 tblespoons grated romano cheese
2 teaspoons minced garlic
1 teaspoon dried oregano
1/2 teaspoon dried tarragon
1/2 teaspoon dried marjoram
butter flavored cooking spray
2 teaspoons reduced calore margarine

combine lemon juice and worchesterhire in small bowl.
place fillets in 11/7/1.5 inch baking dish. pour mixture over fillets,cover and marinate in fridge for 1 hour

combine breadcrumbs and next 5 ingredients in small bowl and set aside

remove fillets from marinade and disgard marinade, coat a large nonstick skillet with cooking spray and add margarine. place over med-high heat until margarine melts. add fillets, and cook 1-2 minutes on each side until lightly browned

coat baking dish with cooking spray, add fillets, sprinkle breadcrumb mixture evenly over fillets. bake UNcovered at 400 for 15 minutes or until fish flakes easily with fork

6 servings.....156cal..5.5fat (1.1 sat fat)...23.6 protein..2carbs..cholestrol,65 mg and 146 mg sodium


YUMMY with a salad and steamed veggies:9
 
Asian Orange Salmon

1/2 cup orange juice
1/2 cup soy sauce
1/2 cup brown sugar
1/2 cup green onions, chopped
3 tablespoons lemon juice
3 garlic cloves, pressed
4-6 salmon fillets

In a large plasitic, zip top bag, combine first six ingreidients and mix well. Add fish and marinate in fridge for an hour.
Preheat broiler.
Transfer marinade to a bowl. Place salmon on broiler pan and cook 4-6 minutes on each side (depending on the thickness of your fish and your broiler). Baste fish with with marinade every time you check on it. When fish flakes with fork, it's done.

PER SERVING:
271 calories;6g fat;36g protein;18g carbohydrate; 1g dietary fiber; 88mg cholesterol; 1492mg Sodium

You could use lite soy sauce to cut back on sodium. I usually don't baste too much. I know it has sugar and orange juice, but is just a marinade, and is devided between several pieces of fish.

Very easy salmon recipe:

1 lb. salmon
1 Tble. lime juice 1 Tble teryaki sauce
1 tsp. seafood seasoning

Mix ingredients and pour over salmon, then sprinkle with Emeril's Essence and Butter Buds. Broil at 400 degrees F till done.

This will result in salmon that is better than you can get in most restaurants - just amazing. I make it all the time.
 
This is my family's absolute favorite salmon recipe. Everyone who's tried it loves it and it's SO easy. It tastes best grilled but if you can't grill it, you can broil it or even saute it in a pan.

GLAZED GRILLED SALMON

3 Tablespoons dark brown sugar
4 teaspoons Chinese hot mustard (available at every grocery store -- don't substitute any other kind)
1 Tablespoon soy sauce
1 teaspoon rice vinegar
2 7-8 oz salmon steaks or filets

Combine sugar, mustard and soy sauce in a medium bowl. Transfer 1 Tablespoon of this glaze to a small bowl, mix in vinegar and set aside. Brush 1 side of salmon generously with half of glaze. Place salmon, glazed side down onto grill. Grill until slightly charred, about 4 minutes. Brush top side with remaining glaze. Turn over and grill until done, about 5 more minutes. Before serving, drizzle reserved glaze over salmon

Serves 2

I often omit the rice vinegar and just brush the glaze as is over the salmon. It's flavorful enough without adding extra after grilling.

I have to say that these recipes inspired me to buy salmon. I tried the breaded baked recipe last night and I have to say that it is the best fish I have ever made.

I am not a huge fish lover, but this was yummy. My kids even liked it, and all made comments. My husband does not like salmon much at all, and he ate it which doesn't sound like much but that is HUGE!

Thanks for sharing! With summer on the way I will enjoy this a lot I am certain.
 
Go to FoodTV.com. They have a wonderful recipe for poached halibut with tomatoes. I'm making it tonight. It's so easy. The only problem is that halibut is more expensive than filet mignon!
 
RAGIN CAJUN SALMON

This is so easy!

Squirt lemon juice on your salmon fillet
Sprinkle hot chili powder on top
Bake at 325 for 10-12 minutes

This is awesome with a steamed vegetable and sweet potato.
 
Japanese salmon over Brown rice pasta:

4 salmaon fillets ( 4 oz each)
1/4. Sake
1/4c. mirin ( japanes wine, can find near sake in stores)
1/4c soy sauce
1 tab. fresh ginger grated or minced
2 cloves garlic, minced
1 tab. olive oil

Mix: Sake, miren and soy sauce together
Heat pan, add oil, add all salmon fillets and literally spread the ginger and galic over the fillets equally...and Add the Sake mixture.
Poach fish on med/low covered 3-5 mins a side.
Serve over...Brown rice pasta. The Sake suace is yummy over the pasta and fish. I actually break up the fish and mix with the pasta! Just as good cold the next day!!

I broil or grill salmon and make a sauce with fresh ginger, garlic, soy sauce with a bit of water and a touch of honey which I brush on as it cooks. It's a little salty and a little sweet and yummy.
