BFL Thursday 1/17

LOL ~ You love those Mini quiche's don't you...:) I still have to try them. I hate to ask, but does someone have the recipe they can post for me?

Back from the gym, did 30 mins on the Elliptical (Hill Plus-Intervals)...Only kept it on L2, but I still feel I got a good workout!! 3.53 Miles!

Gayle - I live about an hour from Cathe's gym (going toward the Jersey Shore). That would be very cool if we could meet up for a long run. :) Course you might have to slow down for gimpy (me). ;-)

Michelle & Melissa - Another coffee addict checking in! When we first moved here 21 years ago, I hated WaWa coffee (thought it was too strong) but now I don't know how I'd live without it, lol. Oh, and I work about a block from Dunkin' Donuts and I LOVE their coffee with cream (no sugar, I add Splenda). I looked up the calories for it one day and it's like 75 or something like that! ;(

Belinda - I made those quiches a month or two ago but made the mistake of not putting them in liners. I had this mess stuck to the muffin tin, but it was DELISH! :9 :D

Gotta run to another test this afternoon, be back this evening.

Hi Jennifer,

Melissa had a great idea yesterday,to put the quiche in a pie plate!

Here is the recipe for the mini egg quiches! Enjoy!

INGREDIENTS

* 1 (10 ounce) package frozen chopped spinach
* 3/4 cup liquid egg substitute
* 3/4 cup shredded reduced-fat cheese
* 1/4 cup diced green bell pepper
* 1/4 cup diced onion
* 3 drops hot-pepper sauce (optional)

DIRECTIONS

1. Microwave the spinach for 2 1/2 minutes on high. Drain the excess liquid.
2. Line a 12-cup muffin pan with foil baking cups. Spray the cups with cooking spray.
3. Combine the egg substitute, cheese, peppers, onions, and spinach in a bowl. Mix well. Divide evenly among the muffin cups. Bake at 350 degrees F for 20 minutes, or until a knife inserted in the center comes out clean.

Good afternoon!! All you runners are terrific! I've never been able to get into running (maybe because of my asthma or just laziness!!)

Little intro- My name is Jean and I'm 39 (soon to be 40 in May). I've been married 11 years to a wonderful man who is a NYC detective.
I have three beautiful children, dd is 6, ds is 5 and my baby-(ds) is 9 months old. I am a teacher currently on leave this year (and next- yeah!) My hobbies include reading, scrapbooking (big time- I'm a consultant) and working out (although not so much in the past year or two-yikes!)

Here's my two victories for today- my 5 yo woke up with a fever and sore throat so we went to the dr. and it was strep. While waiting for the medicine- normally we would just have lunch at Target but today I bought him some popcorn and DID NOT EAT IT! This for me is a big deal! Second victory- even though he is home, I still managed to get in my workout (thank goodness it was only the 20 min HIIT on the treadmill!)

Anyway- have a wonderful day! Thanks for all the inspiration!

Hi Ladies,

Today I did S/H legs plus GS Legs floor work only. It felt great to do both I just hope I'm not over doing it. Less than 60 min total.

Yesterday I made the Homemade Turkey Meatloaf from the EFL cookbook. It was delicious and the family inhaled it. I'll have to try the Pot Roast Gayle was talking about.

A little about me, I am 45 yrs old (just turned on 12/21) and have been married for 22 yrs in April. I have 3 children 17,15, and 9.
The oldest 2 are boys and then DD. Oldest DS is a senior and will graduate this spring. Looking into colleges, what a stressful time.
I am a 7 year cancer survivor and have moved forward with a positive attitude and I will regain control of my life and eating habits. Thanks to all you wonderful and supportive ladies, I am in week 3 of the BFL challenge and have never felt better.

What DVD's do you feel has the best Floor Work? I want to start out w/ this and then slowly start adding in half squats/lunges.
I plan on doing Buns of Steel tonight ...Little cheesy, but great workout! :)

Kathy** good job on making it through your half marathon! What did you do, sing to yourself? LOL! I couldn’t do it! WOW! I am impressed with your schedule! You are a superwoman!

Melissa** all those runners make me feel like a wimp! One day we will catch up with them! My birthday is in May , when is yours? I also love coffee without sugar and milk!

Thanks, everybody, for all the intros!!! Now, let’s see if I don’t have to ask anybody how old their DD or DS is anymore! LOL

I’m SO EXCITED! I just sat at the PC and in my email inbox was my first week training schedule for my Half! WOOHOO! Doing the happy dance here! It officially starts Monday, and I’ll be working on it this weekend to work it around my BFL weight workouts. For now, while the mileage is low, I’ll be keeping my heavy leg workouts, and I’ll see how I feel in a few weeks as the mileage creeps up there. It’s only a HALF, so I don’t have to be as concerned as if it were the full 26+ distance. ANYWAY….

Carolyn-mmmmmmmmmmmmmeatloaf! LOL (can you tell I LOVE FOOD?). Great workout, too! That’s a good combo…S&H and GS floor. I’ll have to tuck that away. Report on DOMS tomorrow, ok? WOW! I’m so touched by your openness of being a survivor. I’m honored to know you! It’s ironic timing that you mention that, because I just came from the bank, where I made a deposit of the money that the school raised for my fundraising efforts for the Leukemia & Lymphoma Society. We raised just over $600 with Hat Day….just ONE DAY! ANYWAY….good for you and your positive attitude!

Jean-AWESOME VICTORIES! Nibbling on the kids food is such a bad habit, isn’t it??? And popcorn, no less! AWESOME! Mind if I ask what company you are a consultant for? Creative Memories? Stampin’ Up? Another? I’m a HUGE scrapbooker myself and I’m curious!

Belinda-Like egg quiches, do ya? I chuckled at your menu! LOL

Kathy-I make those quiches without liners all the time. I just spray the tin (non-stick, even) and they come out fine.

Melissa-stuffed peppers! I’m planning on making them for next week too! Any special recipe you use???

Jennifer-easy on the knee. Great workout too! When I first picked up running about 3 years ago, I jumped right in with a full marathon (Disney in January of 2006). I did it as a fundraiser for the L&LS and we had a ‘coach’ of sorts to help train us. Basically, he used Jeff Galloway’s method, which, although it worked to get me FINISHED with the marathon, I don’t necessarily think it works for ME anymore. Now, I am following the one from Bart Yasso (of Runner’s World) and/or Runner’s World like Kathy.

OK…I have my Book Club meeting tonight. I’m not sure what I’ll be taking for my food ‘contribution’, but I’ll manage. I’m not worried. I’m on such a roll and the food choices have become such a habit. I’ll probably eat before we go and just drink water there.

You are too sweet. I am honored to know you. Looking back, I wish I spent more time chatting with you on the road trip and the other ladies whose names I recognize. You got me on this band wagon and I ain't coming off. I have tried soooo many different things to try to lose weight to no avail, but this BFL program really works and the receipes in the cookbook are fabulous!! It is much easier to stick with a program when the food is good.

Hey, $600.00 is a good chunk of change especially for an elementary school fundraiser. I am on the PTA board at my DD school and it's like pulling teeth to get people to contribute. Great Job!

I wish I had the motivation to run. I tried it a few summers back and it totally flaired up my plantar fascitis. Good Luck to all you

Carolyn - not the same Carolyn that roomed with Erin from Boston?!?! If so, I hung out with you guys for the weekend. Thanks for sharing your story! You are one strong woman!! I just got EFL last night in the mail. I was drooling over that Turkey Meatloaf recipe. I'm going to have to try that this weekend. Or the Pot Roast...the choices are endless!!! Makes it so easy to eat CLEAN!!!

I decided to change my meal #5. I went to the grocery store at lunchtime and am making spaghetti & meatballs for DH & DD. I'm going to make a batch of those meatballs w/the cherry tomatoes in the middle from the Clean Eating magazine.

ETA: FOUND IT GAYLE!!!

Crockpot stuffed peppers with beef and rice

INGREDIENTS:

4 medium green (or red) bell peppers
12 oz. extra lean ground beef (I used Laura’s brand)
1/2 cup frozen chopped onion (or half a chopped onion)
½ cup dry instant brown rice (prepared as directed on box)
1 teaspoon Italian seasoning
1/2 teaspoon black pepper
1 large jar low fat spaghetti sauce (about 32 ounces)

PREPARATION:
Mix ground beef, onion, prepared rice, and seasonings well. Cut tops off of peppers and hollow out any seeds. Stuff peppers with equal portions of ground beef mixture. Place stuffed peppers in Crock Pot, cover with spaghetti sauce.

Cover and cook on low for 7 to 8 hours on until ground beef is cooked through and pepper is tender. *I froze a couple of these and they taste just as good as fresh.

Calories per pepper: 252 (31% protein/37% carbs/32% fat)
 
Hi Gayle- Nibbling is one of my big problems so I was so proud. Also making excuses not to exercise (like a sick child) is another major issue. So I am so glad I stuck to my committment!

Gayle, I remember right before the RT you had posted something about having your first pedicure. I had responded that I was going to check out your newly-painted piggies at the RT. It was either Saturday or Sunday morning we were all in the lobby waiting for the buses and it took EVERYTHING I had not to go up to you and check 'em out!! I was so afraid that you wouldn't remember my saying that and you'd just think I was a WEIRDO!!! :+
 
Jean – Wow, you’ve got your hands full! I remember when my three were little, it was hard to even catch a breath sometimes. :) Good job on not nibbling!

LOL, Belinda….I actually started counting stuff to keep my mind busy. Luckily half of it was on the boardwalk in Atlantic City so I got to dodge people coming out of the casinos too. :)

Gayle – Which half marathon are you running? I love the start of a new race training plan too, then by the last long run….I start counting down the minutes til I’m done running, lol.
P.S. When you make the peppers, make sure to season the beef and rice well or they come out a little bland. ;) I also think it's time for some new muffin pans for me!

Melissa and everyone – If any of you all attend the next Cathe RT, I’ll come up and visit. I’ve gone to the last 3, so I feel a little guilty signing up for the next one. I’ll probably come up for Cathe’s Friday step class.

Hi Kathy. Why feel guilty?! Everyone has a fair shot to get in. You'd better try for the next one!!! I really regretted not going a day early and taking her Friday step class. So if I get in this year, I'll see you there!;)

On the crock-pot peppers, they were delish, but I do think I could have seasoned the beef and rice a little more. I'll have to remember that the next time I make them. It's a great recipe!! My house smelled so good the day they were cooking...:9
 
Kathy-I don't think I would feel too guilty if I get to go on my third Cathe road trip. Maybe a teeny tiny BIT guilty, but not a WHOLE WHOLE LOT! LOL

Melissa-I certainly DO remember that piggies comment! HA! I LOVED that first-ever pedicure, and you can bet your bottom dollar I'll do it again this summer!
