Really Good Lunch Idea

One of the guys I work with came up with this one and I Loved it, so, I thought that I would share. Simple, but very good.

Two slices of Cinn. Raisin Ezekiel bread -toasted.

Spread regular goat cheese on one slice,
top with organic seedless rasberry preserves over goat cheese (about a teaspoon of each ) pile on some fresh sliced turkey, top with other Ezekiel slice, and you have an awesome Ezekiel Turkey Sammie for lunch ! I usually have some Organic Rice crackers & small apple to go along with it.
If you want a smaller version, just eat it open faced.

Reminds me of that 'day after Thanksgiving' sandwhich that you make with leftover turkey and cranberries ,,,minus the stuffing that is !!

You had me until you said the word "cheese!" LOL! I hate cheese! My DH thinks I"m weird.


My Word that's funny !! Not weird at all though. I used to work with someone who can't stand cheese ! Every kind, not matter what,, he just hated it !
( Actually , not a bad HATE to have. ) Really , cheese should be had in moderation. I just happened to fall in love with goat cheese when I first tried it. Other cheeses like 'Velveeta' and that weird stuff with the holes in it
( swiss I think ?? ) ,,,,ISH,, don't like it either !!

You'll have to try it with out the cheese and see what happens ! :p

Yes, the rest of the sandwich sounds really good! The funniest thing is that my mom swears I used to eat cheese when I was little, but I have absolutely no recollection of ever eating the stuff!
 
Oh my goodness! You have just put some of my favorite foods together in a combination I would have never considered by myself! This will be lunch tomorrow.......thanks.
 
My mouth is totally watering now!! You don't like cheese?!?! :confused::rolleyes: I'm afraid we can't be friends anymore! Just kidding!!

There has only been one time in my life when I overdosed on cheese and that was the trip to France my sister and I took (we called it the budget tour because we kept getting lost and managed to hit ALL of the major points of interest on the day it was closed. So, we got to see the outside of the Louve, the grounds of the palace of Versailles, had coffee in the Champs de lesay (sp??) 'cuz the shops were closed!! :D:D Oh yeah, and Notre Dam was under renovation with scaffolding all over... hmmmm, kinda took the romance out of it!!

Despite all of the wonderful, amazing, glorious cheese and baguettes, bordeaux, chocolate, etc.. we both managed to lose seven pounds!! That is again attributed to getting lost- we have the best memories of that trip- especially getting lost and exploring some of unknown treasures of both France and Germany! Ahhhhh, good times! :D

So, I managed to eat sooo much incredible, off the charts, out of this world French Fromage & baguettes that I was actually SICK of it by the end of the trip!! As a joke, the last night we were there, my sister had snuck into my room and put a container of laughing cow under my pillow!! I am quite sure I heard the French version of the Psycho theme!! :eek::eek::eek:

Good news is that I quickly regained my desire for cheese... although, it was just not the same as being in France, neither was the coffee. That was about 15 years ago, so the "good stuff" is much more available now!!!

Oh my gosh, does this ever sound good! I def am going to give it a try! Matter of fact, I just made cranberry salad yesterday...the kind with celery, walnuts and pineapple although, I love raspberry preserves. Thanks for sharing! BTW, I LOVE just about any kind of cheese! :p
 
That does sound good. I didn't know there was a such a thing as cinnamon ezekiel bread. I wonder if my stores carry it???

Yah, The Cinn. Raisin is my favorite. Not sure where you reside, but, most 'Cash Wise Foods' stores carry this kind, organic section of coarse. Otherwise, I usually go to our local "Good Earth COOP' to find it. Frozen, but I like it that way becuase I can just take out what I need and keep the rest in the freezer for next time. Open faced, makes a good snack.

Oh,,,BTW: DebbieH, if you read this; That cranberry salad sounds really good !! If you don't mind, would you possibly share the recipe ??
I LOVE salads that include walnuts !!

Hi Morgs!

Here is the recipe :

Molded Cranberry Salad 8 or (16) Servings

Ingredients:

8-Ounce Can Crushed Pineapple (20 Oz. Can)
3-Ounce Box Rasp. Jello or any RED jello. I use Sugarfree Cranberry (2 Boxes)
16- Ounce Can Ocean Spray WHOLE Cranberry Sauce (2 Cans)
1/4 Cup Chopped Celery (1/2 C) I usually add more then this.
1/4 Cup Chopped Walnuts (1/2 C) I add more and so will you! Ha!
Optional...Sprinkle in a lil' Splenda or Stevia if you like sweeter & not so tart.

Directions:

Drain pineapple, save juice, adding enough water to juice to make 1 1/4 (2 1/2) cups of liquid. In a saucepan, bring liquid to a boil, remove from heat and stir in Jello til dissolved. Break up cranberry sauce with a fork and stir into Jello mixture. Stir in crushed pineapple, celery & nuts. Pour into mold. (I just use a plain bowl) Refrigerate til set.....ENJOY!

It's soooo good and fat free other then the healthy nuts. I have used pecans
when I didn't have walnuts. The amounts in parenthesis double the recipe. The pineapple is more then doubled but works fine since the next size up can is 20 ounces...let me know if you like!!! :D
 
Awwwwww-SOME !! Thank you so much for taking the time to do that.

Now I have a new recipe to try ! I do a combination of the 'Eat Clean Diet', and also 'Eating for your Blood Type', and this salad includes what the 'Blood Diet' would consider Super Foods for me, so this is going ot be a good addition to my diet plan.

This is also going to be a great addition to the grilled lamb chops we're going to have this Friday ! Can't wait to try it , and thank you again !

I got the stuff to make this sandwich and I'm sitting here enjoying it right now. You are right, it is very good. I wasn't sure I'd like goat cheese but so far it seems ok. Id on't really taste it with the raspberry on it. My question is, what kind of sliced turkey do you use? Are you using deli slices? I baked my own turkey breast and chopped it up into small pieces but it's so tough. I have a problem with processed meats so I don't use them unless I absolutely have too.

Just wondering if you all used deli turkey or something else?

P.S. You should try to Ezekiel cinnamon bread with pb and raspberry preserves. OMG, to die for!
 
This recipe is similar to one I discovered over Thanksgiving...it used brie and a fig spread on a cranberry/walnut bread (from Whole Foods bakery). Best sandwich ever!! Thanks for reminding me :)
 
I baked my own turkey breast and chopped it up into small pieces but it's so tough. I have a problem with processed meats so I don't use them unless I absolutely have too.

Try drizzling the turkey with a little bit of buttermilk and then baking it in the oven. It will come out more moist without the calories of bacon, which is another good method for keeping a turkey breast moist.

I don't do the commercial/processed meat either, it gives me headaches. My Dad says its the nitrates. I was very sorry to give up bacon.
 
I read this thread when it was started and couldn't wait to make the sandwich so I did it with what I had on hand: open face whole wheat bread spread with strawberry jam, topped with crumbled goat cheese, topped with deli turkey. Yummmm..... I've had one every day since!

Debbie,,,thanks by the way for the recipe !! Boy,,did it ever come in handy.
We skipped the Lamb chops, & went with Steak Kabobs instead; ended up burning the cabobs, SO,,, the Cranberry Salad pretty much turned out the be the main coarse ! Very Very good though!!!
