Yummy Homemade Trail Mix

I posted this in another thread, but just in case some of you don't see it there, here it is again:

You can double, triple, or quadruple the following recipe, which I modified from the pocket-sized Abs Diet book:

2 cups raw, unsalted almonds (you can also use 1 cup almonds and 1 cup pecans)
1/3 cup rolled oats
cooking spray
2 Tablespoons honey
1/2 teaspoon cinnamon (but a little more doesn't hurt)
1 cup Orange flavored dried cranberries (Craisins)
Chopped dried apricots (I buy the whole ones and then cut them up - just use however much you like)

Mix the almonds and oats, then spray with cooking spray (3 shots, stirring after each shot). Stir in the honey and cinnamon. Spread the almonds in a single layer on a cookie sheet. Bake in a 350 degree oven for about 15 minutes, but keep an eye on them and make sure the oven rack isn't too low - these will burn easily (I know from experience). I suggest "stirring" the almonds about halfway through roasting. Once the almonds are cooled, transfer to a bowl and mix in the cranberries and apricots. I store my trail mix in cleaned, empty peanut jars or tupperware containers.
