What are you cooking / having for Christmas dinner?

I'm buying them this year but the cookbook "Tamales" has lots of ideas. Once you get the technique down, it's easy to improvise. Roasted squash, pumpkin, mushrooms w/ greens, corn w/ black beans, etc. If you're not vegan, use butter in the masa. If vegan, use canola but you'll need to play with the amount.

It's ALL about the fondue this Christmas!!! Cheese and broth with lots of breads, veggies, seafood and beef tenderloin to enjoy. I love fondue because it takes longer to eat than to prepare it. Turkey drives me NUTS!! Hours and hours of prep and it's scarfed down in about 40 minutes, no thanks.....now if someone else were doing the cooking......:+

We are having Christmas Eve dinner at my MILs. This is what's on the menu:
Turkey and Dressing
Ham
Homemade Tamales
Giblet gravy
mash potatoes
broccoli cheese casserole
cranberry sauce
rolls
green been casserole
pumpkin pie
pecan pie
blueberry pie
Christmas cookies
fruit salad

We have about 40 people coming over.

Whew!!! I just realized why we all fall asleep shortly there after! LOL

LOL about your MIL and the lasagna. We have the same issue in our family. My SIL offered us baked beans with pork once and told us that we could just pick out the pork. Over the weekend, she asked if we could eat shrimp. She means well, but I don't understand why it's so difficult for her to understand that being a vegetarian means no meat products!

I am only cooking for my household which is 5 people. I am making:
2 hams (cooked in 7 up to suck out the salt)
cornbread stuffing
veggies
cranberries
rolls
gravy
pies
mashed potatoes
tamales (the whole month we enjoy these)
 
I was about to say, Shelley, with your dry sense of humor, I almost expected you to end this with a big "not really, but it sounded good."

Well, funny how so many people have similar traditions! We're having a Christmas Eve party, and I'm serving Italian. We have vegetarians and non veggies, so we'll have spaghetti, spahetti and meatballs, veg and non-veg lasagna, and manicotti. We'll also have shrimp and crab and crab dip as appetizers as my family tradition is seafood on Christmas Eve. There will be about 50 people *gulps and panics anew!*

Christmas day - is turkey, stuffing... We had a debate in the family over turkey or ham. DDs prefer ham, DH prefers turkey. Compromise - Christmas dinner - turkey, New Year's Day dinner - Ham. Everyone is happy.
 
I guess you have to truly love to cook to attempt these menus at Christmas - kudos to you guys!

I cook at Thanksgiving because it's only about the food, but the thought of having to cook at Christmas with everything else that's going on (plus my yucky job, which this year requires working Dec. 26) makes my head explode.

When I count my blessings, one of the things I'm thankful for is the Honey-Baked Ham store!
