I'm buying them this year but the cookbook "Tamales" has lots of ideas. Once you get the technique down, it's easy to improvise. Roasted squash, pumpkin, mushrooms w/ greens, corn w/ black beans, etc. If you're not vegan, use butter in the masa. If vegan, use canola but you'll need to play with the amount.
