Veggie Burgers...anyone make them from scratch?

I had a veggie burger for dinner tonight and I am convinced I could make it better myself...with guidance!LOL!!! Anyone make a veggie burger from scratch?

Yes, with lentils. They are fabulously delicious. The mix does not take long to cook. Shaping them and preparing them for cooking takes longer. But, I make a double batch and freeze half and eat the rest which can last several days. The recipe comes with a fab parsley and garlic sauce which is a nice compliment. They are worth the effort, definitely.

After eating these, you will not be able to go back to pre-packaged, cardboard, starchy, tasteless burgers again!

Want the recipe or do you have one?

Clare

Okay, Clare...got me drooling over here...Where would we find the lentil mix? Thanks:9 deb

GUys:

I'm still here, but it's 12.38 am (Thurs) where I am and I need some sleep. I will come back on tomorrow morning and post the recipe for the entire lentil burger dish, from scratch, OK?

Patience oh hungry ones!

Clare ;-)

LENTIL BURGERS RECIPE

(Feeds 4)

Ingredients:

2 tablespoons olive oil
1 red onion, chopped
2 large celery sticks, chopped
2 large carrots, chopped
8 oz lentils (250 g)
1 pint water (600 ml)
1 teaspoon ground coriander
salt and pepper
2 tablespoons chopped parsley
6 oz wholemeal breadcrumbs (175 g)
flour
1 egg, beaten
olive oil for frying

Yoghurt sauce:

10 oz natural yoghurt (300 g)
1 tablespoon chopped parsley
1 clove garlic, crushed

Method:

Heat oil in pan, add onion, celery and acrrots and fry until softened. Ad lentils, water, coriander and salt and pepper to taste. Bring to the boil, cover and simmer for about 50 mins, stirring occasionally, until liquid is absorbed.

(You can fit in Leaner Legs while it cooks. No excuses now!!!)

Mix in the parlsey, and one third of the breadcrumbs. Leave to cool for a bit.

Using floured hands, shape the mixture into burgers (as big or as little as you want them to be), and coat them in the flour (which you have tossed onto a big plate --actually I always skip this stage and roll them straight into the egg mixture), then roll them in the beaten egg mixture (they get slippery at this stage), then roll them in the plate of breadcrumbs so that they are coated in breadcrumbs by the end.

When all the burgers are prepared in this way, heat olive oil in large frying pan and fry your burgers until brown and crisp on each side. This really only takes a couple of minutes. Don't forget, the mixture has already had nearly an hour to cook, so all you are really doing is browning them at this stage to make them more edible and so that they do not fall apart!

To make the sauce, mix the yoghurt, parsley and garlic together and pour sauce over your burgers. Delish!

NOTES:

I always serve this with a huge salad and sliced tomatoes seasoned with pepper and salt, in winter some cooked greens and other veggies would be great.

Some of you may be hesitant at eating burgers fried in oil, but please remember that this is olive oil which gets a huge health thumbs up! You do need some fats in your diet and olive oil is one of the best, it's an essential part of the mediterranean diet.

After doing Leaner Legs, you will be ready to tuck into these burgers, so ENJOY!!!!

I always double the quantity, because I hate to cook every day, so I keep a quantity in the fridge to eat this week and stick the other half in the freezer for next week, or whenever.

Weight Watchers also has a great veggie burger recipe. It's been a while since I made it, but it's in one of their cookbooks.

Clare, this baby is printed up, placed in a sheet protector in my cook's notebook & on the schedule for my cooking schedule on Sunday! Thanks again for your troubles.

Thanks Clare...I've been waiting for this all day...http://smilies.sofrayt.com/%5E/r/dance.gif[/img] I don't eat eggs but I know of a substitute....:)..Carole

Marla....:)...I have to check vegsource.com....I know they posted one on their new veggies forum....something with flaxseed...I'll let you know when I find it...http://smilies.sofrayt.com/%5E/r/wrysmiley.gif[/img]..Carole

Bingo!!! :
"In many recipes you can create your own egg substitute by any of the following methods: use one ounce of mashed tofu; use 1/2 mashed banana in sweet recipes; mix one tablespoon of flax meal with two tablespoons water; or use one tablespoon of corn starch or arrowroot mixed with two tablespoons of water. These techniques will help the recipe to “bind” when eggs are included for that purpose. But don’t try making an omelette out of these ingredients!"...:)...Carole

Thank you clare, I've printed this for my recipe book!
