LENTIL BURGERS RECIPE
(Feeds 4)
Ingredients:
2 tablespoons olive oil
1 red onion, chopped
2 large celery sticks, chopped
2 large carrots, chopped
8 oz lentils (250 g)
1 pint water (600 ml)
1 teaspoon ground coriander
salt and pepper
2 tablespoons chopped parsley
6 oz wholemeal breadcrumbs (175 g)
flour
1 egg, beaten
olive oil for frying
Yoghurt sauce:
10 oz natural yoghurt (300 g)
1 tablespoon chopped parsley
1 clove garlic, crushed
Method:
Heat oil in pan, add onion, celery and acrrots and fry until softened. Ad lentils, water, coriander and salt and pepper to taste. Bring to the boil, cover and simmer for about 50 mins, stirring occasionally, until liquid is absorbed.
(You can fit in Leaner Legs while it cooks. No excuses now!!!)
Mix in the parlsey, and one third of the breadcrumbs. Leave to cool for a bit.
Using floured hands, shape the mixture into burgers (as big or as little as you want them to be), and coat them in the flour (which you have tossed onto a big plate --actually I always skip this stage and roll them straight into the egg mixture), then roll them in the beaten egg mixture (they get slippery at this stage), then roll them in the plate of breadcrumbs so that they are coated in breadcrumbs by the end.
When all the burgers are prepared in this way, heat olive oil in large frying pan and fry your burgers until brown and crisp on each side. This really only takes a couple of minutes. Don't forget, the mixture has already had nearly an hour to cook, so all you are really doing is browning them at this stage to make them more edible and so that they do not fall apart!
To make the sauce, mix the yoghurt, parsley and garlic together and pour sauce over your burgers. Delish!
NOTES:
I always serve this with a huge salad and sliced tomatoes seasoned with pepper and salt, in winter some cooked greens and other veggies would be great.
Some of you may be hesitant at eating burgers fried in oil, but please remember that this is olive oil which gets a huge health thumbs up! You do need some fats in your diet and olive oil is one of the best, it's an essential part of the mediterranean diet.

I always double the quantity, because I hate to cook every day, so I keep a quantity in the fridge to eat this week and stick the other half in the freezer for next week, or whenever.
