I really like The Vegetarian Mother's Cookbook and Cooking by the Seasons: Simple Vegetarian Feasts. Simple, tasty recipes!

How It All Vegan
The Garden of Vegan
La Dolce Vegan

All are by the same author. I like them because the recipes are yummy and easy. Even your meat eating friends and family will like them.

I recommend considering a subscription to "Vegetarian Time" magazine. I love the recipes and articles. Some are vegan, some are veggie. It varies.

I like all the cookbooks already mentioned, but I'd also suggest "Veganomicon" or "Vegan With a Vengeance", both by Isa Chandra-Moskowitz. Her recipes always turn out great for me.

I second the above suggestions. Her recipes always turn out well for me and it is the type of stuff you can feed non veggies.
