There is a yummy recipe for Cucumber Tuna Boats on the Fitness Video Fanatics site. Anybody else have any great tuna recipes. I love tuna in the summer time!

It is pretty basic but I love it!
Tuna Rocefellar
1 can tuna (I use albacore)
1 box frozen spinich
6 slices swiss cheese
mayonaise
bread crumbs (1/2 cup)

thaw spinich, drain!
mix tuna, spinich, 2 slices of cheese, I use about 3 - 4 tablespoons mayonaise, bread crumbs(can use 1/4 cup)

divide into 4 portions, put into cookware of your choice, I use cooking shells

preheat oven to 350, cook for 40 minutes
 
this is a great and simple recipe that I could eat every day!
1 can water packed tuna (I prefer albacore)
1 green onion chopped
1 stalk of celery chopped
juice from 1/2 lemon
1 T mayo (Full fat!)
worcestershire per your taste--I use about 1/8 t.

I eat mine with wheat bread or with low fat Triscuits.
 
Darn! These look really good, but I just gave my last can of tuna to my kitty! (Ran out of Fancy Feast) :p

Guess I'll have to pick more up next time. I'd really like to try these. :9

What a lucky kitty! My cat gets a can of tuna for her birthday. Of course, she doesn't like the tuna for cats that is .29 a can! Only the best for the Queen!
 
Beth! Oh, it was only because I ran out of her Fancy Feast and I came home empty handed. I know, I spoil her too much. :)
Her name is "Princess" after all. :)
 
My favorite summer salad is simply vine ripened tomatoes, armenian or japanese cucumbers, red onion, parsley &/or spinach & tuna with a nice vinegarette. Not only a snap to prepare, but perfect for a sweltering day.

I also love an orzo (pasta) salad nicoise but it's a bit more labor.

My poor hounds only get the liquid from the tuna. They'd be rather jealous of Princess the cat!
