Top Chef Masters Vegan Dishes

Anyone see Top Chef Masters last night? They made vegan gluten-free dishes that looked sooooo good. It was great to see a cooking show on tv making healthy food for a change!
 
OMG I wish I had been invited to that meal! Chiarello's quinoa pasta looked to die for. I've eaten at his restaurant in Napa Valley, and it is wonderful. He is an awesome chef, and so are the others. Hubert Keller, in particular, is an expert in healthy cooking. And I'm ready to visit Chicago JUST to eat at Bayless's restaurant.
 
Rick Bayless' restaurant is FANTASTIC. I don't think it is overstatement to say he makes the best mexican food in the country. I live in Chicago area and have been their several times. YUMMY!

I loved the show last night - I was really excited to see the vegan dishes they came up with. It was clear that the Art was really uncomfortable with a vegan approach. I wonder if he'd every tried Rice Ice Cream before.

I really enjoy this Masters show more than the regular Top Chef shows. I like to see the mutual respect and support all the chefs have for each other.

I'm so jealous! I love this show, too. I think it's my favorite TV show. (Is it just me, or is Rick Bayless a total cutie, btw?).

You can use quinoa like couscous (think tossed with tomatoes, cukes, black olives, red onion, feta and mint!) OMG!!!
You can toss it with dried fruit and nuts; you could also use it like rice in a rice salad.
You can mix it with pureed white beans, some finely chopped, sauteed veggies and spices to make veggie burgers.
Google it - you'll find a million recipes to use it with. I LOVE IT!!!
