It’s called Vegan Planet.
No, it's not new, and it's actually been referred to a few times here in OD, but I've never seen a whole thread dedicated to it. It's so great, I just wanted to tell everyone about.
I am not vegan, or even vegetarian, but I love this cookbook. We are limited in the quality and variety of meats we can get here in Uganda, so I’ve consistently tried to do more with legumes and vegetables. So far, this is the best cookbook I’ve found. Here’s why.
1. The recipes are delicious. I have yet to find one that I haven’t enjoyed. And even DH thinks they taste great. (Which is a real 'wow.')
2. There is a wide variety of recipes, from many different ethnic sources (hence the name, Vegan Planet)
3. The recipes use basic ingredients that I usually already have. There are a few new and exotic ingredients, enough to make it fun, but not overwhelming.
4. While some recipes do take time and energy to prepare, many are easy and fast.
And, while I'm mentioning cookbooks, let me say that I also love the “More with Less” cookbook. It’s also written from a perspective of wanting to conserve the world’s resources, but not from a vegan/vegetarian point of view.
Well, here's to delicious and healthy eating.
