share food recipes for clean eating

Hi everyone!

I'm wondering if anyone would be interested in sharing any recipes/suggestions for hi-protein/lo-carb/lo-fat, etc meals? Lately, I'm hooked on a breakfast recipe for "pancakes." I use 5-6 egg whites, 1/4c lo-fat cottage cheese, 1/2c all-bran cereal, dash of cinnamon, tsp of splenda and cook it like a pancake in a non-stick pan sprayed with butter flavored cooking spray. I top it off with sugar-free maple syrup. I get the protein, fiber and sweet-tooth fix I need all at once.

I've also started making tuna salad for lunch using plain yogurt and mustard (eg Dijon)instead of mayo. It's actually pretty good. You can add whatever spices you like to kick it up a notch.

I read somewhere about "shannycakes" but haven't tried that one yet.
What creative things do you make to eat clean? I would love to get your feedback.

I'd be interested too, Mary.

I don't cook much, but I can tell you about this stuff called Sun Brand Madras Curry Powder. My husband and I make stir-fries with it. You use about 2-3 level tablespoons of it to the veggies while they are cooking, and some low-sodium soy sauce. We use chicken or turkey or tofu in our stir-fries, along with this great new vegetable called broccolini and whatever else looks good at the market that day.

The seasoning contains:

Coriander seeds, turmeric, chillies, salt, cumin seeds, fennel seeds, black pepper, garlic, ginger, fenugreek, cinnamon, cloves, anise and mustard.

Simply put, it is a little slice of heaven on earth!

C'mon, people, let's have those recipes!

Hi Mary! You should definitely check out the book called "Stella's Kitchen" from Amazon. You can download a free sample; excellent recipes. I'm the one that gave you the recipe for Shannycakes. Kathy:D
 
This is a BFL recipe from Mrs. Bishwit's Kitchen.

Lemon Snack Griddle Cakes
1/3 cup oatmeal
3-4 egg whites (depending on your portion size)
6 grams of protein powder (I substitute cottage cheese as I don't like to cook with protein powder)
1/2 tsp baking powder
1/2 tsp vanilla
1/4-1/2 tsp lemon extract
1 t splenda

Blend oatmeal in blender to powder/flour form
Add remaining ingredients and mix well.

Cook like a giant pancake.

I also get a lot of recipes from www.leanandstrong.com (this is where Shannycakes comes from). Go to the healthy recipes section. The Moroccan Chick Pea Stew is excellent.

Off the top of my head:
1/2 lb extra lean ground turkey
1 can garbanzo beans
1 large can tomatos
1 tbsp cayenne paper
Garlic pepper

Brown turkey add garlic and/or garlic pepper
Add remaining ingredients and simmer 20 minutes. You can top with 1 tbp ff plain yogurt.

Thanks for the suggestions. I don't want to get stuck in a "food rut" and will be sure to try these ideas/recipes. I like to know what people have tried and had success with. I try to find things that fit my needs for clean/healthy eating and that my husband (picky eater) will like too. It can be challenging at times!

Chicken recipe that my DH made for me last night:

We cooked some excellent chicken last night. About 1 lb of chicken marinated in Lawrys Chicken & Herb marinade, 2 tbsp worcerstire and 1 tbsp ff ceasear dressing. Marinate overnight.

Preheat oven to 425 degrees. Spray 9x9 pan with cooking spray. Put in 2 bags of boil in bag brown rice, 1 14 oz can of chicken broth. Place chicken on top of rice and pour marinade over the top. Sprinkle chicken with poultry seasoning, italian herbs and salad seasoning. Bake for 25 minutes.

Also about 5 minutes before the were done DH put thinly sliced tomatoes on top...dang it was good! I eat 4 oz of chicken plus 1/2 cup of brown rice for a serving.

Corn & Black Bean Salad

I think this counts as "clean", even though it does have some olive oil in it (fat), you could cut it back probably, or substitute some chicken or vegetable broth instead. It is awesome!

1 can black beans, drained
2 Cups frozen steamed corn
1/4 cup diced red onion
2-3 smal tomatoes, small dice
bunch cilantro, roughly chopped

dressing:
1/4 C olive oil
juice of two limes (I used the bottled juice)
1 clove garlic, minced
1 T cumin
1 T oregano
1 t salt
1/2 t black pepper
1/8 teaspoon or dash of red pepper flakes
dash sugar

mix it all. If making ahead for a party, add tomatoes just before serving (they tend to get mushy).

That sounds delicious! I've been looking for some salad recipes to eat with this blasted heat we are getting and this will fit perfectly!!

Linguini with Clams

This is a pasta dish, but you can make it with whole wheat pasta. It is from Oprah's cookbook, In the Kitchen with Rosie. It is easy and you can make it quickly. We make it all the time. For when I just can't stand the sight of another chicken breast!

Linguini with Clams

8oz dried spaghetti or linguini
1/2 C dry white wine
1/4 C water
1/3 cup chopped shallots (I use onions)
3 garlic cloves, chopped (I use jarred chopped garlic)
12 little neck clams (usually too expensive so I omit)
10 oz canned baby clams, broth reserved (use two cans, broth from only one)
1t cornstarch dissolved in 2t water
4 t parmesan
1 t oregano
3 T fresh basil (I use 3t dried basil)
1/8t white pepper
1t louisiana style hot sauce
2T fresh parsley, chopped (I add lots more)

Directions:
Cook noodles. Put wine, water, shallots and garlic in a saucepan and boil. Add fresh clams, cover, and cook over medium heat. remove clams when their shells have opened (I skip all the part about fresh clams). Stir broth from one can of the canned clams into the liquid, cook a few minutes more, til reduced by half. Reduce heat to low and whisk in the buttermilk & cornstarch mixture. Cook for 2 min more to thicken, keep whisking. Stir in parmesan cheese, drained canned clams, and everything else.

Don't cook the canned clams too long (heat them up, basically), or they will get rubbery.

Dump over the pasta. Consume!
