Meal Change-Up

Okay, so I'm on vacation and still trying to at least be somewhat careful about what I eat. Usually, for breakfast I have oatmeal (instant) or, when it warms up, cold cereal, right now it's Fiber One Raisin Bran and that's it other than my coffee.

Well, my flight got in at midnight and by the time I got to my Mom's house, washed up and brushed my teeth, bedtime was 1 a.m. I was awake at 7 a.m., got a bath and started to fix my breakfast. I had two scrambled eggs with a little salt, pepper and sweet curry spice, one slice of whole grain toast with a tablespoon of peanut butter, a small glass of OJ and my coffee. Double the calories of what I usually eat for breakfast.

Here's what happened:

We drove four and a half hours to Macon, GA and checked in to out hotel around 3:30 p.m. We got settled in our rooms and I decided to change and go workout. After a long flight, very little sleep, and a long drive, I still had a ton of energy! I did 35 mins. on the treadmill, not much, I know, but I was able to run for a full minute at 6.5, which, again, I know isn't really "running," but for me that was progress. So, I did 1 minute running, then 4 minutes at a 4.0 walk and a 4.0% grade for 30 mins. As I went, I found I could run just a teeney bit longer each time. Afterwards, I worked with a fe weights and to my surprise, I was able to handle heavier weights than I had usually used in a regular gym routine!

My major question is this: Was it the change in the morning meal that gave me all that energy? I usually have carbs, but I mostly had protein this morning. Any ideas out there?

I was happy to see the strength progress and improvement in cardiovascular endurance. Who knows, maybe I'll be able to work my way up to a real run someday!

Maybe the calories, but maybe also the extra protein. When I have eggs for breakfast I feel full and energetic for much of the day. DH has two eggs every day for breakfast, nothing else, and he says the same thing - he feels happy and energetic for much of the day and is just barely hungry for lunch. He used to have oatmeal for breakfast and he definitely notices the change in how he feels.

I feel the most energetic for longer, and stay full the longest when I combine eggs and a carb like oatmeal. I make an "oatmeal custard" that gives me tons of energy, and is great before workouts:

1/2 cup dry oatmeal
1 cup milk or water (i mix both)
1 egg beaten
sweetener - optional
1 tsp. vanilla - optional
1 small 50 calorie container of unsweetened applesauce

Cook in a large bowl in the microwave for 3-4 minutes.

I also make a version of the chocolate mug cake with low fat ingredients that combines oatflour, 1 egg or egg whites, applesauce, milk, sweetener, cocao powder, so it's like eating chocolate cake for breakfast but it's pretty healthy (minus the sweetener of course).

It probably was the breakfast! I have to have protein at breakfast or else I am hungry and grumpy pretty fast. :)

Thanks for the recipes Dela! I am going to try that this week.

Thanks for this! I will definitely try this! I think I will also make eggs a morning staple! Of course, I'll have get up a little bit earlier in the morning to make it! I HAVE to have my coffee hour ( more like 45 min.) before I leave for work! Need the quiet time! It gets pretty rowdy at my office during the day!

Thanks again to all of you! What an eye opener!
