Ideas for Low Carb Snacking?

Boingo1

Cathlete
I wanted to try to reduce my carb intake a little, and see if that helps me at all. I can't think of anything good for snacking (meat? ick!). Any ideas?

oh, and also, any ideas for adding fat into my diet? Presently , I eat Flax Seed in my oatmeal and again in my yogurt. And I started to eat Almonds. What else is there?

Thanks!

Almost every cheese in the world is low carb! Feta is the lowest, & low cal/low fat too. Most nuts--peanuts, cashews (maybe not a nut, but still.......), macadamias, etc. etc. Celery sticks w/cream cheese or peanut butter. Oh yeah, PB is relatively low carb too. All this stuff has the "good" fat you're looking for.

Most berries are low carb, & get this--whipped cream! Zero carbs! :D Mmmmm strawberries & whipped cream..........yep, pepperoni (goes good w/cheese ;)), olives, a lot of other veggies like cukes, broccoli & carrots, go great w/dips made w/sour cream......

I'll keep thinking, but those are my staples. :)

Hummus with celery, or any veggie for that matter, almond butter, cashew butter, cottage cheese, shrimp.

Those are some of my favs in addition to Laura's suggestions.

All sorts of nuts (brazil nuts--a good source of selenium: one Brazil nut a day is enough to fulfill your daily requirement of this somewhat rare nutrient; walnuts).

Better than nuts (because usually lower in fat and higher in protein proportionately) are seeds : hemp seeds, chia seeds (make chia gel by mixing 2 Tbsp of chia seed with 1 cup water, stir well, let sit 10 minutes, stir again and let sit another 10 minutes. Use the gel smoothies, dressings, soups. It doesn't add flavor, but adds nutrition and thickens), sunflower seeds, sesame seeds (unhulled ones are a great source of calcium), pumpkin seeds..

You can also make nut and seed milks: soak 1 cup raw nuts or seeds overnight--rinse really well, then blend with about 1 pt nuts/seeds to 3 parts water (tweak to get your prefered thickness), sweetener (like medjool dates), a bit of salt, optional vanilla. Blend until smooth (with blenders wimpier than the Vitamix, blend with 1/2 the water first until somewhat smooth, then add the rest of the water and keep blending until smooth). Drink as-is or strain through a nut-milk bag (best) or several layers of cheesecloth.

Non-starchy veggies like celery, red pepper, jicama, cucumber can be dipped in nut butters (or thinned out nut butter or tahini--sesame seed butter), hummus, nut cheeses (if you don't sweeten the pulp from making nut milk, you can make nut 'cheese." I've got a combo almond milk/almond cheese recipe in my blog).

I go back and forth with regards to the meat issue. So, I like the tofu versions. I will take some low-fat cream cheese spread it inside a Romaine lettuce leaf, add some slices of tofu deli "meat" and top it with hot sauce. EAS Protein Shakes have 17g's of protein and 2 carbs (I get them at Walmart or King Soopers), the Morningstart products are excellent sources of protein and healthy fats. I love the Smart Dogs with saurkraut. Pickles are pretty low-carb as are olives. I prefer to splurge on the gormet olive bar- just a few potent tasting ones go a long way. One final idea is my famous salad.

Baby spinach
Feta/blue cheese or gorgonzola
Pecans or walnuts
Roasted red peppers and/or artichoke hearts
Balsamic Vinagrette drizzled
You could add grilled chicken or a tofu chicken to kick up the protein

It's a big hit and I get requests for it every time we bring food.

Hope those ideas help!

Pam

All of the suggestions are great. I do like the artichoke hearts at Trader Joe's straight from the jar. mmmm. Also, you can make some pesto and use that as a dip. Its usually olive oil, herbs like parsley or basil, and nuts whirred in a small food processor.

Hi RapidBreath... a moment of silence for the unforunate ones who don't have a Trader Joe's yet. Colorado doesn't seem to be on their radar yet despite my pesky emails to please, please, please open one up here! Love your pesto recipe!

Pam

I do both. But I have to admit, buying it is alot more convenient. I do try to make sure the contents are as basic and natural as possible.

I keep rolled up thin slices of turkey in the fridge at work for a quick snack when I feel hungry. Unless you're looking to put on weight, don't overdo it with the fat. The equivalent of a few tablespoons of salad dressing is all the fat you really need in a day.

ooooooooH, Peanut Butter! :) Good one!

Thanks!

What do you do with the Feta cheese?

A better question is what don't I do with it. :D Feta is my go-to food. It goes in omelets, salads, over entrees, snacks (I love it with olives, but that's the Albanian in me ;)). I buy it in blocks & eat it almost every day.

eggs
cheese sticks
SF jello

Also, I use Soy Slender milk and it only has 4g carbs per cup. Vanilla and chocolate flavors - yum!

Isn't hummus made out of beans? Beans are nothing but carbs. Just wondering. Maybe you are all making it without beans, but I thought that was the main ingredient in any hummus dip.

It has protein and carbs. 2 Tablespoons has 50 calories, 4g Carbs, 2g protein. When you eat it with 4 stalks of celery it fills you up pretty well. ;)

Anyone have a recipe for Hummus? Sounds Yummy!! I suppose I could Google it......but I'd rather hear from all of you......thanks!

Hummus is usually made with garbanzo beans, BUT you can make a hummus with peeled zucchini (and all the other hummus ingredients: tahini, garlic, lemon, olive oil, spices) and you would have a hard time missing the beans!
