I am not exactly sure if you are asking b/c you want to buy one??

I have a 5L pressure cooker and it is one of my most beloved cooking items. I can easily cook 2-3 cups of dried beans (kidney, black, navy etc...) in it. Just add some oil to help with any foaming. You will not need to add as much water, as the pressure in the cooker will keep all steam in which creates more water. Make sense!? Just remember a pressure cooker can be used for so, so much more than just beans!!!!! :p

A pressure cooker is a great investment :)

HTH!!

A 4-qt. pressure cooker would be fine for 1 cup of beans.

What kind of beans will you be cooking? For example unsoaked pinto beans take about 25 minutes to cook once pressure is reached. According to the chart I am looking at, soaked pintos should be done in 6 minutes.

Pressure cookers are great. My kettlebell trainer got me hooked on pressure cooking -- even gave me a free pc session -- we cooked a couple of dishes together and she sent me home with food -- awesome!! She theoretically was going to have a blog where she posted recipes -- there are a lot of recipes on one of her blogs here:

http://tracysfoodandthought.blogspot.com/2009/01/pressure-cooking-on-oprah.html

but you kind of have to hunt for the recipes -- the hunting is fun though, and you'll learn a lot. I don't know if she has her blog that's strictly for pressure cooking up yet.

I have a 7 Liter duromatic Kuhn Rikon turn-top model...I love it and it's the perfect size for me. Honestly, I don't use it to it's full potential because I chose to make mostly beans in it (vegetarian that I am). I love lorna Sass's book and she was the one I wrote to to recommend a make and model for a one or two person household (mostly a one person household where the persone was a vegetarian) she wrote back (now how cool is that?.....very to me_and recommed the 7 litter size because it was basicallyjust for me. It does make the best beans ever (I add a postage stamp size of kombu to help digest the bean). I found the best beans Gold Mine Natural Foods (no I am not affiliated with them in any way)(http://www.goldminenaturalfood.com/detail.aspx?ID=165). I just wanted to give you all a heads up, Gold Mine Natural really has some awesome beans. They're not cheap but then again you just don't get duds.

I don't pre-soak my beans before pressure cooking.

I did a quick google and found this:

http://www.fabulousfoods.com/recipes/article/223/27942

It has some info about pressure cooking beans and includes a cooking times chart for various kinds of beans, which is identical to the chart in Lorna Sass's "Recipes from an Ecological Kitchen".
