I just made vegan stuffed cabbage...

... yeah, I know, another food post. But I found this vegan recipe for stuffed cabbage that has walnuts, mushrooms, brown rice, onion, raisins, and tomato for the filling, intead of ground beef. I've got two casserole dishes in the oven right now... am wondering how it will turn out because I've only made stuffed cabbage with meat. If it turns out good, I'll post the recipe for all you vegetarians out there. :)
 
Sounds amazing!! I'm wondering if perhaps you were the one who talked about using Penut butter in a sauce?? Man, that sounded amazing! I just bought Vegan Planet cookbook and am hoping to try the Chipolte mashed potatoes soon.

My vegan experience has been pretty amazing so far, but, the things I have been eating have all been pretty un-adventurous I'm afraid. The extent of my recipes are simply re-adapted from things I used to eat with meat and cheese: Minestrone soups, lentil soup/stew, gazpacho, bean spreads, wraps and salads. Hot cereals for breakfast with lots of dried fruit and nuts etc. I am sooooo ready to delve into some yummy recipes!
 
It was delicious! I think my DH missed the meat... he mumbled something about beef, but also helped himself to two servings. Here's the recipe:

2 heads of cabbage
3 cups cooked brown rice
1/2 cup raisins
1/4 - 1/2 cup maple syrup (depends on how sweet you like it, I used 1/3)
2 cans of stewed tomatoes
14 oz package of mushrooms, chopped
1 cup of walnuts, chopped coarse
1 large onion, chopped
your favorite jar of tomato sauce

Core and boil the cabbage (around 10-15 mins), so you're able to pull off at least 12 leaves per head.

Combine the rise, raisins, syrup, 1 drained can of tomatoes, mushrooms, walnuts, and onion. Fill the leaves with this mixture, fold up nicely, and place the rolls in a baking casserole dish. (I used two) Chop up some of the remaining cabbage (as much as you want for adding to the sauce... I used about 2 cups), add to your tomato sauce, and pour over the top of the rolls. I also added the 2nd can of stewed tomatoes.

Bake at 350 for about an hour and fifteen minutes, or until nice and bubbly. You can add salt and pepper at the table. Enjoy!!:9
 
Mmmmm...sounds yummy! I am at my Dad's and I debated on bringing my Vegan Planet cookbook that I just got in the mail (because it's big and I'm always so close to my weight limit with my luggage). Well, I brought it and it's a good thing. My Dad's wife can't have salt (well, except for the FETTUCINE ALFREDO she had at lunch today at Olive Garden!!!), so I am going to need to be creative and cook healthy things. I'm SO glad I brought that book with me. Whew! My Dad showed me all this MEAT he has in his freezer that I could cook - ribs, steaks, etc. Icky. I think I'll surprise them. She has Alzheimer's and she's pretty far advanced (should really be in a care facility but my Dad says she's his "sweetheart" and he worries that no one else would care for her like he does - even though it's getting really difficult). Anyway, she doesn't really like his cooking so hopefully she'll enjoy something different. I better go read it so I can shop tomorrow. :)

Careful with those Chipotle mashed potatoes....they are HIGHLY addictive!!!....:)
 
Thank you for posting this recipe! Sounds really good..can't wait to try it out on my family. We are big cabbage fans around here. Every ingredient sounds like they would go well together. deb
