It was delicious! I think my DH missed the meat... he mumbled something about beef, but also helped himself to two servings. Here's the recipe:
2 heads of cabbage
3 cups cooked brown rice
1/2 cup raisins
1/4 - 1/2 cup maple syrup (depends on how sweet you like it, I used 1/3)
2 cans of stewed tomatoes
14 oz package of mushrooms, chopped
1 cup of walnuts, chopped coarse
1 large onion, chopped
your favorite jar of tomato sauce
Core and boil the cabbage (around 10-15 mins), so you're able to pull off at least 12 leaves per head.
Combine the rise, raisins, syrup, 1 drained can of tomatoes, mushrooms, walnuts, and onion. Fill the leaves with this mixture, fold up nicely, and place the rolls in a baking casserole dish. (I used two) Chop up some of the remaining cabbage (as much as you want for adding to the sauce... I used about 2 cups), add to your tomato sauce, and pour over the top of the rolls. I also added the 2nd can of stewed tomatoes.
Bake at 350 for about an hour and fifteen minutes, or until nice and bubbly. You can add salt and pepper at the table. Enjoy!!:9
