lean protein ideas
Hi, Mary Ann! I'm glad you found this site! It's great, isn't it? If you aren't fond of beans, which are a great source of lean protein, let me see what else I can come up with here. How do you feel about chicken? You can do the same thing with the salad with skinless white meat from chicken. What I would probably do is get a whole chicken and stew it with carrots, onion, and celery ( and salt and pepper ). That way you have the meat with some extra flavor, and it's very tender. Also, you can chill the broth after you take the chicken out, and then skim the fat off the top and you have a great base for a soup.
Once you take the chicken off the bones and discard them and the skin, you have a lot of options for the meat. You can make a great "fried" rice by spraying the frying pan with nonstick cooking spray, adding rice ( Cooked ahead and chilled overnight works best ), cut up chicken, and lots of veggies ( I microwave frozen veggies and add them already hot ). Scrambling in egg whites ( or whole eggs if cholesterol isn't an issue for you ) before adding veggies also increases the protein value here. I season it with onion, garlic, ginger, salt and pepper, and reduced sodium soy sauce.
A hard boiled egg makes a great high protein snack, and they are really easy to cook several at once.
You might want to check at VF for some good tofu recipies ( see my respose about VF below ). Tofu has lots of protein too.
