Hardcore Fitness Maniacs for Thurs April 30

Shana - Nope nothing! I thought if anything the last exercise was gonna do something, but not even that one left a lasting impression. Hate to have to do them twice, too long. :p

Patti - I just wanted to thank you for your response last night. I needed to hear that so I can keep persevering. My weight hasn't dropped anymore recentlt, but it is that TOTM so I am blaming it all on that.:p And what no asparagus recipes?

Ha - I thought the same thing about that last one! I felt it at the time, that's for sure. See, we are just too strong :p

Orange Sesame Vinaigrette
1/3 cup sesame seed oil
1/2 cup rice vinegar
1/2 cup fresh orange juice
1 tablespoon honey
1/2 cup mint (finely chopped)
Salt and pepper to taste

Patti - This is great except DH is allergic to Sesame!:p Here's another challenge for you. My birthday is Saturday, any yummy treat recipes that aren't all bad?

See, we are just too strong :p

LOL!

Teddy and Janie....Thank you!:D
Janie...yes, I use the pool alot. I love being outside. My son and all his friends enjoy it too! As well as my black lab...I think he enjoys it the most! Going to spend the day in Sacramento tomorrow shopping w/ DH then enjoy a nice dinner at our favorite resturaunt. Saturday we are going to the race track to place bets on the Kentucky Derby....I love horse races!

Patti...I plan on starting STS in June and do that over the summer months. Thinking I will do P90x after that. BTW....love all the recipes you post. Haven't tried any yet but they all look so good!

Shanna...Nice job on the leg workout girl!

Ok, heading upstairs to do chest/back/abs and HIIT then off to DS baseball game.

Dallys: Thanks for the info on the bike. I am being tempted beyond belief! DirtDiva sent me info on the Yeti Arc-X too. Can somebody loan me about 3 million bucks, please??
.

Yeah, we need money trees for sure. I'm lucky that my dh is so great with bikes. He buys all our frames and components/parts separately and then puts the bike together himself. It's much cheaper that way and you can pick and chose and upgrade to what you want. But, I know not everyone can do it that way. Your cheapest bet, is to look for last years models or older. My new road bike frame is a Lite Speed Arenburg which is a 2004 maybe older (last year they made that model) and was brand new still under warranty. Got a pretty good deal on it. It's very plain looking, but I love it. Here's a link to what my frame looks like, although all the components/parts on mine are a little different. http://www.bikepedia.com/QuickBike/BikeSpecs.aspx?Year=2001&Brand=Litespeed&Model=Arenberg+(01)&Type=bike You can also find some good deals on complete bikes on Ebay if you know what you are looking for, but you have to be patient.
ETA: Just noticed that Yeti Arc-X is a Cyclocross bike. What kind of bike are you looking for? Are you intested in cyclocross? Cyclocross looks like a riot! Maybe I'll get a cyclocross bike one day. Oy! $$$

Teddy- Yeah, you wanting a bike too! We all need bikes!:p

Linda: Just sub another oil- any you like. You could try some simple olive oil or go to the health food store and get something exotic. :)

I have tons of dessert recipes. It's a problem. I found this one recently and haven't tried it- it seems like something more than a "snack" so I haven't made it. Do you want a more traditional chocolate cake? I have a recipe that I made for Easter that turned out really well and is reasonably healthy for cake. I mean, it has flour (mostly whole wheat actually) but it isn't an oats dessert like most clean eating recipes. Tell me what you want and I can probably find something close. :)

Peanut Butter Struesel topped Banana Bread

BREAD
3/4 cup fat free plain yogurt
1 cup fat free cottage cheese
splenda or stevia to taste
4 large egg whites
2 cups oat bran
1 cup oats
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large bananas, mashed
1/2 teaspoon vanilla extract

STREUSEL TOPPING

1/2 cup oats
3 tablespoons creamy natural peanut butter
stevia or splenda to taste

Method

Preheat oven to 350F, and spray 2 8x4 inch loaf pans with nonstick cooking spray.

Make bread batter by beating yogurt and cottage cheese cheese at medium speed with electric mixer until creamy. Add splenda/stevia and eggs, beating until just blended. Combine oats, oat bran, baking powder, and baking soda in another bowl. Gradually add this to yogurt/cottage cheese mixture, stirring just until blended. Stir in bananas and vanilla. Pour batter into pans.

Make streusel by combining the oats, stevia/splenda, and peanut butter in a small bowl. Cut in the peanut butter with a pastry blender or fork until the mixture is well combined and crumbly.

Sprinkle the mixture over the batter, and bake for 1 hour, or until toothpick inserted in center comes out clean. If necessary, shield the top with foil for last 15 minutes to prevent browning.

Cool bread in pans for 10 minutes, remove from pan, and allow to cool on a wire rack for another 30 minutes.

Patti - ooohhhhh! That looks good! No not looking for traditional cake, no one in my house likes it, including me. We are a pie and ice cream kind of family. But the recipe you posted looks like something DH and I would like. Thanks!

Patti - BTW, what do you use to calculate the macro contents of your recipes? I made this Asparagus Quiche the other night and really want to figure out the counts.

Linda - how good do you want to be?? I have about 5001 cookbooks so I could look through mine too. One recipe I am thinking of is super easy and if you got the right ingredients, could be somewhat clean and after all, it IS your birthday :) This one is really good - it involves chocolate chip cookies, cool whip, milk and a pie crust - I think that's it. You freeze it so it's like an ice cream pie and really, tastes like you worked hours on it. I sometimes have to have my chocolate chip cookies and I get Back to Nature brand. They are the best and don't have the crap in them that the other brands do. I also have the Ellie Kreger Foods You Crave, or something like that, and it has some good recipes in it too. I don't cook much but I collect cookbooks like nobody's business ;)

God Shana, DON'T post that recipe! Kidding. It sounds incredible.

Linda: I use www.myfitnesspal.com- love it. Before I bought my GWF I also logged all of my meals there too. I'll look at my recipes and see if anything else looks good.

Here is a sorta pie recipe- haven't tried it yet.

Chocolate Peanut Butter Pie
4 Tablespoons Peanut Butter
1 Tablespoon SF syrup
1 1/2 cups Rice Crispy Cereal (I use puffed rice cereal)
1 (1.4 oz.) Package Sugar Free Instant Chocolate Pudding Mix
2 Cups Carb Countdown Milk

In a small bowl, combine peanut butter and syrup. Microwave on high for 20 seconds. Stir in cereal, and then press into a 9" pie plate and chill. Mix pudding and milk together, and then pour over piecrust and chill.

This isn't very guilty at all, I eat it all the time. But if you like pumpkin pie, it's good. The kids eat it with me.

Crustless Pumpkin Pie

1 can (15 oz.) Libby's 100% Real Pumpkin
1/3 cup egg whites
6 oz. Skim Milk
6 oz. Sugar Free Vanilla Davinci Syrup
1 1/2 tsp. Pumpkin Pie Spice and cinnamon to taste

Put all ingredients in a bowl and mix. Pour into a Pam sprayed glass pie pan. Bake at 425 for 15 minutes and then decrease temp to 350 and bake for an additional 45-60 minutes. When the pie is browned on the top it's done.

Hey Linda, do you like cheesecake? I have a few healthier recipes for that too. I won't bombard you further tonight. :)

Hello...I think I heard someone mention my name lol!

I have been doing Chalene's CLX and loving it! I also substitute CC and Cathe cardio/abs. I have gotten great results so far. Almost done with Push Phase. Today is a rest day, as my legs are super sore and I feel likt sh*t....again. Sore throat and ears. Hope it isn't strep as my son is just getting over it.

Not sure if anyone is around tonight, so I will bb tomorrow!

OK - I will do some searching :) And I WILL post that one. It is sooooo good. I used to take the 5 minutes or whatever to make it and take it to parties - people thought I'd spent hours and there were never leftovers...

Shana: Sounds like a keeper of a recipe- I love easy ones that taste great and seem complicated. :)

Linda: The DaVinci syrup is in the coffee aisle at my Kroger's- you use it in hot drinks. The sugar free flavors have splenda in them. Here is one without syrup that is also good.

Pumpkin Souffle
1 cup canned pumpkin
½ cup egg whites
½ cup cup fat free cottage cheese
½ tsp pumpkin pie spice
1/2 tsp. cream of tartar or baking powder
3 Tbsp. Splenda

Whip all ingredients together in a blender. Spray soufflé or pie pan with nonstick spray. Fill pan with batter and bake at 350 until fluffy and slightly brown, ~20 minutes or a little longer.
