Pretty much anything that's not processed is a 'good carb': whole grains, like millet, quinoa, brown rice, wild rice, buckwheat, barley. All veggies and fruits are 'good carbs' as well, though some fruits, like bananas and watermelon, are higher glycemic, and some people may want to limit them.

By the way "wheat bread" is NOT a good carb. WHOLE wheat bread is. "Wheat bread" just means the flour comes from wheat, and it's a tricky way for manufacturers to trick the customer into thinking it's healthier than 'white flour', but unless it says "whoke," that's exactly what it is.

Bad carbs usually come in boxes or packages and are white.

But Randi just because they're good carbs doesn't mean they will work for you - so observe your body as you do these things. I cannot do grains even with the cleanest of eating, because I pack on the pounds. Breads are completely out for me and fortunately I don't like pasta. Even things like my beloved steel cut oats make the weight creep back onto me. I really have to go fruits and veggies - good carbs of course as well. But watch how your body likes the various foods.

Oops I guess that was rather misleading wasn't it? What I meant was that the fruits and veggies are of course, good carbs. I also eat nuts - primarily walnuts or almonds. But I have to stay away from starchy carbs as well like potatoes, bananas, and corn. On cheat nights I love popcorn though. But knowing that I have to stay away from these things comes from a long time of trial and error. Just don't assume because they're healthy carbs they'll all be great for you - watch how your body reacts to these good carbs - you've gotten some great ones here.

Hi Rand!

Such good advice here -- also remember, as one other person said, that just because it's a good carb, grains might still be one of those things to avoid. And also one should always soak the grains overnight in either some whey or kefir -- or soak them a few days in warm water and let them sprout. Grains have many anti-nutrients -- nature seems to have intended it that way -- so that the seed can have a chance to grow. Herbafores (I've probably misspelled that) have 2-3 stomaches in which to digest these grains, but we have only one. Soaking the grains or even soaking your flour in kefir overnight begins the digestive process and neutralizes the anti-nutrients, which can block mineral absorption.

For more info, I would recommend the following book: Nourishing Traditions by Sally Fallon. As an aside, in the old days -- the days of our grandmothers or great-grandmothers, grains would naturally ferment as they stood in the field, being exposed to weather and such. But when the industrial age hit, grains no longer stood in the field and new processes of separating the grains no longer allowed the grains to naturally ferment.

Thank you guys for your good advice! When i started working out with Cathe a year ago i just stopped eating all kinds of carbs, no fruit, bread, pasta, not even wheat.I know that is not healthy what so ever! I've just been scared of eating them because i want to stay lean.
Happy fourth!

Actually, wheat isn't that good of a carb, and it's probably overeaten in the US, which can cause sensitivities to it. Most grains are also acid-forming in the body, with some exceptions like millet. But fruit is SOOO good!

I agree!
"Food for Life" buns and breads, made from sprouted grains, are about the only bread I eat (except for one other brand that has sprouts and hemp). They are yummy, and so healthy. Not for the faint of heart, perhaps, since they are very dense (anything would be, compared to the regular 'mushy' soft stuff that passes for bread in American supermarkets).
