Don't spend a lot of time in the kitchen (you need that time to work out Thursday morning!) but take a cake to the dinner that will knock their socks off. I've posted this recipe before, but it merits repeating:
SOUTHERN PRALINE PECAN CAKE
INGREDIENTS:
1 (18.25 ounce) package butter pecan cake mix (Betty Crocker makes one)
1 (16 ounce) container coconut pecan frosting
4 eggs
3/4 cup vegetable oil
1 cup water
1 cup chopped pecans
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Spray a 9 or 10 inch Bundt pan with non-stick cooking spray.
Combine the cake mix with the frosting, eggs, oil, water and 1/2 of the pecan pieces. Mix until combined.
Sprinkle the remaining 1/2 of pecans in the prepared Bundt pan then pour in the cake batter.
Bake at 350 degrees F (175 degrees C) for 50 minutes or until a toothpick comes out clean.
ONE CAUTION FROM ME: THE CAKE MAY FALL APART WHEN YOU TRY TO TAKE IT OUT OF THE PAN, SO YOU MAY WANT TO BAKE IT IN A COUPLE OF LOAF PANS, OR THE LIKE.
