Discovering DELICIOUS!

Well, I must say that my Clean Eating Magazine subscription has been the best investment! Over the last 4 weeks, I've been creating dinner menus 2 weeks at a time. We're trying to stop eating as much meat as possible not for any particular reason other than it's so expensive and it's more fattening. I'm incorporating recipes from CE, my Soup: A Way of Life Cookbook and Rice, Beans & Grains Cookbook into my menus. I have not hit on a single bad recipe yet! I'm discovering some absolutely delectable meals - they're healthy, clean and yummy!

Now I know how chefs fall in love with cooking!

Yesterday was Moroccan Tomato Soup (cold soup) and today it's Asparagus Primavera with Couscous.

I started this because I was getting bored with the same 'ole meals everyday and never knowing what to make and doing everything last minute, including defrosting!

This is so great! I'm in heaven!

Are they hard to prepare? I love eating veggies but I find that prep work takes some time and since I live in the middle of po dunk no so when I buy my veggies ahead of time they sometime spoil by the time I'm ready to make the next meal.
 
I only shop for 2 weeks at a time and the veggies stay fresh that long for my last recipes in that rotation. Prep isn't too bad. I'm getting better! I'm a very slow slicer/dicer/chopper as i'm always afraid I'm going to take a finger off! The recipes are pretty simple. What makes it easier is reading through the recipes the night before and again right before I start so I have my game plan set.

I'm loving it! The boredom of my meals is gone!
 
My "Healthy Hedonist" cook book came in the mail Tues, and I spent yesterday at work looking at it. I have little yellow sticky notes all thru it. Some yummy looking stuff in there. A couple things I want to try out this weekend. Which reminds me, I need to go put the ice cream maker in the freezer!

Another fan here! I'm gonna try that buffalo chicken recipe they have in the latest issue. I LOVE buffalo wings, & the recipe looks scrumptious. :)
 
I just went ahead and subscribed. I've been on the lookout for new eats lately. If I don't like it I'll cancel.

Heidi - There are a lot of recipes that are family friendly, IMO. Most issues also have recipes for sandwiches and wraps and some even give recipes for using the leftovers from the meal plans!

Nan - I love that the majority of the space in the mag is recipes. They also make it easy by giving you the shopping list for the 2 week menus. I don't usually use those because I only plan my dinner menus. I'm golden at breakfast and, now, with the new dinners, have plenty of healthier choices for lunch, too, without having to schedule meals!

I'll have to check out Healthy Hedonist, too!

Laura - The buffalo chicken recipe did look delicious! Let me know how it turns out! You'll probably get to it before I do!

I used to dread cooking, but now I look forward to it. I come home and relax a bit, then start some music and get in the kitchen and go! It's actually fun these days!
