chilean sea bass

This recipe is really yummy.

Sea Bass Cuban Style (from www.allrecipes.com)

INGREDIENTS:
2 tablespoons extra virgin olive oil
1 1/2 cups thinly sliced white onions
2 tablespoons minced garlic
4 cups seeded, chopped plum tomatoes
1 1/2 cups dry white wine
2/3 cup sliced black olives
1/4 cup drained capers
1/8 teaspoon red pepper flakes
4 (6 ounce) fillets sea bass
2 tablespoons butter
1/4 cup chopped fresh cilantro

DIRECTIONS:

1. Heat oil in a large skillet over medium heat. Saute onions until soft. Stir in garlic, and saute about 1 minute. Add tomatoes, and cook until they begin to soften. Stir in wine, olives, capers, and red pepper flakes. Heat to a simmer.
2. Place sea bass into sauce. Cover, and gently simmer for 10 to 12 minutes, or until fish flakes easily with a fork. Transfer fish to a serving plate, and keep warm.
3. Increase the heat, and add butter to sauce. Simmer until the sauce thickens. Stir in cilantro. Serve sauce over fish.
 
Sorry, I try to avoid it because it's been so overfished it is now on the verge of being an endangered species. Many restaurants have taken off their menus for this very reason.
 
Oh, but its sooo good. I just had some in fact. If its endangered, I wonder why Whole Foods who is really big on "Saving the Planet" and all of its species is the one who sold it to me?
 
I'm really confused about this also. I had read that it's politically incorrect to eat Chilean Sea Bass. But then a trendy restaurant in town had it as it's special the other night.

I think it was being poached and now there are strict regulations about who the vendor buys from. Not sure though.

I love chilean sea bass too and whole foods was selling it again over here for a while and I've noticed it hasn't been available for at least a month now. I"m sure there is some reason that its been taken off the market again.
 
Yep, that sounds about right. That is how much I paid at Whole Foods, needless to say, I only bought a few ounces to enjoy-it is a delectable fish, better than salmon.:p
 
We just served this for dinner Saturday night. We bought it from Whole Foods and made it that day. I just used fresh ground black pepper as the seasoning. Spray your pan with some olive oil and fry for 5 minutes on both sides. It was delicious! :9

There is a website out there somewhere (I can't remember what it is) that keeps tabs on this and then posts what is "okay" and what isn't. Orange Roughy is also on the list of over-fished. But the list does change season to season and the fishermen get more responsible. By and large, they have to because otherwise they fish themselves out of business, too. I can't remember the website though. darn.
