::::: CHEETAHS ::::: Monday already?? 3/19

Okay, I decided during lunch today to take a rest day. Instead, I went to Kohl’s to check out summer clothes. Of course after I got there and looked at summer clothes for myself and became discouraged because of the weight I still need to lose, I then headed over to the kids clothes. A couple weeks ago I bought DD enough clothes to last through the summer, however, DS needs a few things. Right now he looks like a “bum” when he goes to daycare, at least that is what DH says. LOL Afterall he is supposed to get dirty and enjoy himself so why invest the money in good clothes. Needless to say, I need to buy DS some nice things to start school in the fall and to wear to church/special occasions. Kohl’s has so many cute things out right now. Unfortunately, if the shirts don’t have Spiderman, Pirates of the Caribbean, or Star Wars on them DS won’t wear them. I’m going to change that when he starts school.

Cathy – Sorry to hear you were so sick on your ski trip. I’m glad you still were able to have some fun.

Linda – Great job on the 6 miler!!

Gayle – Wow, 10 miles on the treadmill. That will be me in about 2-3 weeks. Right now I’m only up to 8. What do you do while you are running that much on the TM? I normally watch a movie. I’m wondering how I will do running my HM the end of April without my TV in front of me. LOL BTW, great goals you have set!!

Judy – I’m so sorry to hear about your family’s loss. (((HUGS)))

SunnyD – Congrats on your pay increase and your new purchase. What kind of bike and trainer did you buy? For the past couple years I keep saying I will buy me a bike, trainer, and trailer for DD. I love the idea of being able to use the bike both inside and outdoors. If only I had room then I would have bought it already. I need a bigger house. LOL Happy Feet is coming out tomorrow so DS won’t have to wait too long.

Carole – I hope you find your kitty soon.

Susan – Sorry to hear DD sprained her ankle. I hope she gets better soon. Good luck with the Dr. appt.

Wendy – Good luck getting your taxes done. I hope the IRS is good to you. Funny story, DH does our taxes every year. Last year we had to pay $1200 in estimated taxes for 2006 because DH does programming on the side and they don’t take taxes out. This year we get back the $1200 we paid in advance. All in all we broke even. What a waste to have to pay the money to begin with!

Christine – What a great idea, cooking for the week! I normally make enough baked or grilled chicken for my lunches on Sunday, but never have cooked for the whole week. I might need to give that a try. Do you freeze the meals or cover and refrigerate? I make a monthly menu that helps with variety. Would you mind sharing your recipes for the chicken enchiladas and lowfat mac & cheese? DD and DS love mac and cheese and I always resort to using a box mix. Enjoy trying out your new shoes! You are probably right about my dog, Sadie. My MIL dogsat for us once. She told us we could never give Sadie away to anyone because all she did was mope around the house and sleep on the bed with our scent on it while we were away.

Shelly :: yes, I did go to work today…I felt kind of nauseous after lunch, so apparently, it’s not COMPLETELY out of my system…thanks for the kind thoughts. We made the best of it – what else can ya do? – and did manage to have fun. :) Have a great tempo run & PP premix, if you fit that one in.

Judy :: No need for personals…I imagine all are in shock right now…thinking of you and sending more ((((HUGS))))!! Sounds wise to avoid the ice.

Wendy :: I feel the same about my mornings…now that I am working in doubles, that may have to change a couple of weekday mornings. I can’t believe this is week 11 for you, either! WTG sticking with a rotation this long.

Carole :: Yes, it is a nasty virus! The last (and only other time) I was unfortunate enough to catch it was about 5 years ago – also on vacation. Could’ve used some of that Irish luck this weekend to ward it off, but oh well. I’m better now. :) Enjoy BBC Arms & Abs and PLB legs.

Jackie :: thanks for the warm thoughts ~ we did manage to have fun, so it wasn’t a total wash… Oh, I think the protein question came from Gayle. How did you sub your Bosu for the bike?

Susan :: I’m glad you enjoyed your weekend away with DH…sounds like it was positively therapeutic. Sorry to hear about DD’s ankle sprain, though – how did she make out at the doc’s? …I have a new appreciation for how much work our backs do on a daily basis – I can see now that they can take a LONG time to heal from injury. Keep up your great attitude in taking it day by day and not obsessing. That seems to be key to recovery.

Sunny :: hope you whacked her with a cancellation fee! I’da been seriously P.O.’d at a 5:31 bailout!!! NOT COOL!

Wendy :: Oh, you’ve gotta try it sometime. It burns SO many calories and is so much fun. It’s an excellent workout and challenge. Enjoy that butt-whooping courtesy of Tony!

Christine :: Ha ha re: the fat “add”…that typo was just too good to resist, eh? :) (Thanks for the chuckle, Carole. :))Yes, I think I do need cardio to lose…although apparently a wicked virus will do the trick. I definitely do not have my “normal” AKA out-of-control appetite back.

Here just for a quick minute.

Kristi....currently, my new thing is my mp3 player. On my runs during the week, I use an iTread workout. On my long weekend runs, it's either all music, or I do the first half of my run with an iTread workout then just stay at a steady pace (sometimes even at a tempo pace run). You'll be fine running the half outdoors. The adrenaline and all really kicks in. I worried about the same thing, I did the majority of my training for the Disney full on the TM and was just fine. Plus, the CROWD support and the music/live bands is out of this world on these halves and fulls. It's my favorite part!

Christine-I got Spinervals out in the mail to you today, First Class (1.35). I almost didn't go into the PO because they were doing snow removel and all the roads were blocked off. I just parked several blocks away and walked, though! LOL

OK....just finished dinner with the boys. Time to chill out till bedtime. (See if I can talk them into swimming at the Y for an hour or so).

Oh, I'm always willing to share recipes. I don't freeze these unless they will be cooking in over 4/5 days. Chicken I make sure I serve within 2/3 days. I just put them in the fridge covered in foil, then take them out an hour before cook to warm up to room temp. They do take longer to cook, so keep that in mind.

Mac and Cheese

Macaroni & Cheese
8 servings

12 ounces low-fat cottage cheese
8 ounces lowfat sour cream
4 cups elbow macaroni, cooked
2 cups lowfat cheddar cheese, shredded
1/2 cup skim milk
1 green onion, chopped
3/4 teaspoon salt
1/2 teaspoon pepper
2 egg whites
Butter-flavored cooking spray
1/4 cup dry bread crumbs
1/4 teaspoon paprika
Garnish: fresh oregano sprigs
Combine cottage cheese and sour cream in container of an electric blender; process until smooth. Combine cottage cheese mixture, macaroni, and next 6 ingredients; spoon into a 2-quart casserole coated with cooking spray. Sprinkle with breadcrumbs and paprika; coat with cooking spray. Cover and bake at 350° for 30 minutes. Uncover and bake 5 additional minutes. Garnish, if desired.

Green Chile Chicken Enchiladas

1 lb boneless, skinless chicken breast
1/2 cup diced sweet onion
1/2 cup fat free, low sodium chicken stock
6 low carb fajita-size flour tortillas
10 oz can green chile enchilada sauce
3 oz farmer style cheese
6 tbsp chopped cilantro
1 tsp olive oil

Heat 1 tsp olive oil in non-stick skillet.
Add diced onion and chicken, cook over medium-high heat until chicken is slightly browned.
Add chicken stock, cover and lower heat to simmer.
Simmer for 40 minutes. (You can get in a decent workout while the chicken simmers.)
Remove chicken from pan and shred with 2 forks.
Place it back in the pan and boil off excess chicken stock.
Preheat oven to 375.
Spray a 9 x 9 baking pan with non stick spray.
Spread 1/3 of the enchilada sauce in the bottom of the pan. Place a small amount of shredded cheese in the center of a tortilla, add 1/6 of chicken mixture, roll up and place in pan.
Do the same with 5 more tortillas.
Pour the remaining enchilada sauce over all.
Sprinkle with remaining cheese.
Bake for 20 minutes. Garnish with cilantro.

G'evening Cheetahs! It turned out to be a beautiful day! Once the rain cleared up it warmed up & the sun came out! We spent some time after dinner outside & went for a nice walk. The girls are all on bikes now!! (well, Allison's still on training wheels) It's nice not to have to push the stroller around the block!! ;-)

I did LIC this morning, I haven't done that one often enough (I think maybe 2x?) so it seems like a new workout. No pain in my leg, but it only seems to be the higher intensity that does it. Then this afternoon I felt like doing more abs, so I did the abs/ planks from SJP.

I'm going to stick to the elliptical tomorrow & not run again til maybe Friday. I think my body just doesn't like for me to run. ;(

Hey Christine, I'll be joining the biking crew soon, I hope!! I did a 13 mile bike last week & it felt great!! I hope to get a new bike soon & then will really hit the biking hard. I need it for training for my half. I want to add in a spin class 1x a week too.

And don't feel bad about not running, that's been me pretty much since the marathon. It just seems my body doesn't like for me to run.

And I'm crackin' up at your reversal of Carole's typo! It gave me the giggles! :p

And too cute of you being scared of the lightning & the moon. Hannah's always been afraid of thunder, she used to run screaming funfer funfer when she was 1 yo!!! Awww, now she's all grown up! ;(
 
Susan ~ I hope your dd is feeling better. Poor thing!!! We don't have our trampoline up yet this year (we take it down for the winter) but I'm always afraid of someone getting hurt. We do have the cage around it so no one can fall off at least!

We do seem to have a lot of people around here. For a while my dh complained that it seemed we hardly had people over (of course that was when it seemed someone was sick constantly!), and now in the last couple weeks we've been busy!! And my best friend & her dh are coming for dinner tomorrow night too!

LIC was great, I enjoyed the workout! I added on some pushups, dips, and pullups too. }(

Great job on the power walk. I hope your back cooperates for you soon.
 
Cathy ~ That's usually the one benefit of being sick- weight loss & lack of appetite. Just remember that it does come back, I found that after my last bout w/ the tummy bug!!

Hope you enjoyed YogaX, that's one that I'm looking forward to trying out. I'll be the proud owner of the X in April. I'm getting a good deal on it from a friend.
