Can we talk favorite cakes?

My favorites are Italian Cream and German Chocolate, with the good homemade icing, of course. I was recently given a recipe for a Pumpkin Upside Down Cake that is very good and looks very pretty, too. Everyone loved it when I took it to our last family gathering. But the one I make when I really want something sinful is a fudgy, chess-like cake with pecans. It's topped with a cool whip, coconut icing with Hershey bar shavings on top. I literally OD on this one. :p The only name I have for it is $250 cake. I'd be happy to share any of the recipes if you like. ;)

Coconut Cake!!!!

I use a real coconut (yeah, I don't make this cake often). I make a regular white cake, and add a little of the coconut milk to the batter, and then I make a cream cheese frosting with the flaked coconut mixed in!!!

I am a huge cake lover, but here is ONE of my favorite recipes. It looks like a mess, but always gets rave reviews. It is super fudgy and the icing is baked into the cake, so it is really easy.

Earthquake Cake
1 C. Coconut 1 C. Chopped Pecans
1 C. Chocolate Chips 1 Pkg. Chocolate Cake
1 8 oz. cream cheese (softened) 1 Stick margarine
1 lb. box powdered sugar

Grease and flour 1 13X9 pan. Spread coconut, pecans and chips in bottom of pan. Prepare cake mix according to directions. Pour batter over mixture in pan. Mix margarine, cream cheese and sugar, glob mixture on top of batter by teaspoons. Bake at 350 for 45-50 minutes. Cake will be shaky but will set up. It looks like it has been in an earthquake! Thus the name!

I second Better Than Sex

I make it for parties all the time. You can also use caramel or butterscotch topping instead of chocolate to add a variation. I've also applied the same technique using other flavor cake mixes, such as white or lemon w/strawberries or a lemon glaze. You can use imagination with this one.
