Bread Machine & Whole Wheat HELP!!!

Hi Suz!

Your picture cracks me up! I have no suggestions. I love homemade bread and making it from scratch. One of the most satisfying things I have ever done, sad, huh? I have an awesome WW bread recipe, but alas, it has white flour in it, and is not designed for a bread machine. Hope you get some good responses.

Terri - I had to go back and forth between the picture of your loaf and mine. Made me crack up. Yeah, I'll say wheat doesn't rise as much!!! At least not mine. :) I'm gonna try your recipe too. Your bread is soooo pretty. My white loaves look like that. I just don't get my wheat loaves.

Another idea, instead of adding in white flour (which I've done too, King Arthur Unbleached Bread Flour it is:) ) you could experiment with a bag of the new "white wheat" or ultra-grain flours. Their nutritional profile is closer to that of whole grain flours and I've had great success with them in whole grain loaves. They do wonders to lighten up a heavy whole grain bread.

Suz, you know, people auction food items on Ebay all the time, e.g. cookies that look like a movie star -- stuff like that. I think Shelley's onto something here and you should put your Virgin Mary bread up on Ebay. :p
 
Clearly you're not looking carefully enough:p You have to WANT to see it! Come on! Maybe Suz could bake another and it could look like John Lennon. Maybe her bread machine is possessed?:p

Mattea - I didn't know there was a white wheat. I might have to look into that.

Shelley - Is THAT what the Virgin Mary looks like in Canada? :p I guess when I set up my auction I'll have to be sure to specify that I'll ship to Canada!

Terri - I'm thinking troll too. What I WANT to see is wheat bread! But no matter how bad I want to see it, it's not happening. :)

Jeanette - I could actually hear the wind way up high - it was this really scary, strange, howling sound. Never heard it before (for as windy as it is here). It was eery.

Hi Jeanette,

Please share your recipe for bread. I've been trying to make WW bread with a KitchenAid stand mixer.. I could have used the first loaf as a brick because it was so hard and the second loaf got bigger but wasn't very flavorful. The third loaf was an inprovement but took three hours to rise (I used rapid rise yeast). Is bread making a 'gift' that I don't have? ;-)

Suz - it's kind of like those pictures that were popular a few years ago, the ones that just looked like squiggly lines, until you stared at them for a while and suddenly it was the Last Supper or something? Yeah, like that.

Here is a recipe I made up last night and I already tested it. It worked great for me. I have it sitting on my counter now.

This makes about 2 pounds

1 3/4 c. + 2 T. of warm water
1 T. canola oil (optional)
4 2/3 100% whole wheat
1/4 c. brown sugar
1 1/2 t. salt (uniodized)
1 t. diastatic
2 1/2 T. gluten
1/8 t. powdered ginger root
1 large packet or 2 3/4 t. of active dry yeast

Select Whole Wheat Bread on machine and start it up.

Enjoy!

Gosh, thanks! Okay, I have a couple of questions. Can I just buy diastatic at a health food store or something or do I have to sprout my own wheat berries and then crush those little babies??? And the gluten - would that be the vital wheat gluten that I used or not the same thing?

You get dastatic at the health food store, and it is vital gluten that I use, again at the health food store.

OMG!!!! I love this picture of Gizmo (well,I've loved all the pics)!!!!! He is too precious, I'd love to give a great big hug myself, but since I can't, please give him another for me!
