blackened fish

I've been getting into eating fish recently, trying to find ways to cook it and I recently tried blackened salmon following the directions on the seasoning bottle, using butter and frying it. It came out delicious, but I was wondering if anyone here makes blackened fish and if you had a healthier way to make minus the butter? Most recipes I search online use the butter, could I use something else to get the seasoning to stick and fry it or bake it?

Ya know, I'm not really sure about this:confused: Maybe try it with a little bit of olive oil? I know it's healthier than butter! hehe;) I suppose if no one else has an anwswer, you might have to do some experimental cooking!:D hehe!

I have made a few "blackened" dishes and use spray olive oil in my non-stick pan instead of butter. You could try the spray butter flavored Pam also if you want the butter taste.

I usually use peanut oil or olive oil. I think the trick is to use a well-seasoned cast-iron skillet.
