Baked Sweet Potato--Toppings?

Just some freshly ground sea salt and black pepper for me.

I like to bake mine in the oven with foil on them. They come out so moist. When I make them in the microwave they seem too dry.

i LUV mustard on mine - i know, i'm weird!

my sister also gave me a great easy recipe using a baked potato, tuna canned in water, onions, and plantain chips(!). you just mix them all together and bake them for about 45 minutes - delish!

I don't care for a baked sweet potato but I love the fries I make. I make them like one of the other poster suggested. I am going to try those chips though. They sound good. I think that I like them as fries because I like a little crunch.

Sure! I get them from Kroger. They are right by the regular potatoes and sweet potatoes in a small bin (they also have micro-white potatoes but I haven't touched one of those in years). They are CHEAP too. I'm at work but will look at the label for the brand name when I get home just in case you don't have a Kroger where you live.

Thanks for the cott. cheese idea! That's what I had w/ dinner tonight, a baked sweet potato w/ 1/2 c. cott. cheese, cinnamon, & pumpkin pie spice! Delicious!

I have a bad sweet tooth so I put a little brown sugar, some low fat margarine (sometimes), fat-free whipped cream in a can and a handful of walnuts.......YUMMY!! leigh:)

Rose,

I checked the label and these are actually called "Micro Sweeties". They are produced by Landreth Farms in Vardaman, MS (I live in a suburb of Jackson, MS and honestly can't tell you where Vardaman is!!). I'm not sure if you can find similar ones where you live but I did a web search for "Micro Sweet Potatoes" and found several hits. Good luck!

This may sound gross, but it's delicious.

Sometimes before I go workout, I put a sweet potato in the oven. By the time I'm done, the sweet potato is done.

Then I mix a scoop of unsweetened vanilla protein powder into it, along with some cinnamon and a TB of flax oil (or Udo's oil). It's really yummy and good for you!

Smart Start breakfast cereal...just mix and crunch them into an already baked sweet potato...great!

>Is Celtic a brand name or a reference to the sea the salt

It's a brand name, but also refers to where the sea salt comes from. See www.celticseasalt.com . The 'fleur de mer' salt tastes particularly good.
