Baked Potato Topping ideas ???

Hi All,

Just wondering how I can transform my humble baked potato into something extra-scrummy ? Has anyone got any nice topping ideas to share, aside from the usual cheese and baked beans ?
I am having 2 small-medium sized baked potatoes for dinner tonight, and yes I will be having low fat cheddar and baked beans on it !!!!!!!!!

PS: What does everyone prefer an oven baked potato, or a microwave baked potato ? What are Sweet Potatoes like to bake ?

Ah, there's no comparison between oven-baked and microwaved, either in texture or in taste. Oven-baked . . . mmmmm . . . I can almost taste them now.

Also, have you ever tried "screaming potatoes?" You cut them into wedges, nuke them in the microwave for a few minutes until they soften, then bake them in the oven until they're done (this is where the screaming comes in--as they release steam, they whistle like a teapot). I like to spray them with Pam and turn on the broiler for just a minute or two to make them crunchy. Dip them in ketchup and they're almost like French fries (without the guilt).

As for toppings--ever try green pepper chunks, a sprinkle of imitation bacon bits, finely chopped pepperoni, or my favorite, low-fat cottage cheese?
 
Ooh, ooh! Here's another good one (spoken like a true carbohydrate addict)! Half-inch chunks of potato and sweet potato (2:l ratio), with onions and green peppers to taste, either "fried" in a non-stick skillet with a little Pam or "fried" in fat-free Italian dressing. Mmmmm.
 
Re: sweet potatoes. These are one of my favorite veggies! I haven't baked them for a long time (I used to cut them into thick slices, then bake in apple juice, which makes kind of a glaze). I microwave my yams. They take only 6 minutes (give or take, depending on oven power and yam size). After you microwave them, wrap them in tin foil to let them steam for 5 minutes (the same technique is suggested for microwaving potatoes).
 
I like to spray them with one of the zero calorie "butter" sprays and then add some green onions or something some sauteed mushrooms.

I haven't done it in a while, but I used to love them topped with lite sour cream and salsa! It's really good!

Baked potato idea.............Twice baked.

First: bake as usual in oven (go a little longer than normal)

Spoon out the potato part and add either lite sour cream or lite ranch dressing and mash like a mashed potato.

Second: Add the mixture back into the potato shell and bake under the broiler for few minutes until golden brown.........YUM


The same can be done for a sweet potato but add a little brown sugar to the sour cream (not ranch)

Hey Anna,

I use potatos in a soup with Kale and a ton of garlic and sometimes pieces of spicey turkey sausage added at the end. This soup ends up looking like a thick green potato chowder. My kids love it with a salad and bread. I know you were asking about baked potatos, but I thought I'd offer this idea. dmd
 
I like to put some low calorie tuna salad on a baked potato, then a tiny bit of cheese or vegan cheese and melt it in the microwave.

Another good potato topping are sardines, a bit of raw sweet onion, vinegar and salt and pepper. It sounds gross, but it's good.

On a sweet potato I like a touch of butter and a bunch of Texas Pete or other tabasco sauce.
 
These are all such great ideas. I've got one for leftover baked potatoes.

Last week I had a leftover and instead of throwing it out like I usually do I cut it in half length wise, then scooped out the inside and put 1/2 a slice of fat free cheese in each side, sprinkled with just a FEW bacon bits & baked at 400 for about 7 minutes. I had a little bit of reduced fat sour cream with them, too. Add a small grilled chicken breast and that was my lunch. It was just as yummy as Friday's with no guilt!

For sweet potatoes I like to sprinkle with Splenda and salt. I really like that sweet/salty thing- even do it with oatmeal, but that's another story. If you are looking for ways to get healthy fat, try the sweet potato as above with 1 tablespoon of natural honey roasted peanutbutter. Reminds me of sweet potato pie.

Hello,

I've always liked mine with some broccoli (good for you, too!) and cheese. If you're watching the calories, add more broccoli and less cheese.

Chilli, even canned chilli is good on them. I also like to have taco baked potatoes, just use the potatoe instead of the shells they are awesome like that. And ground beef and spagetti sauce is great on them.
