appetizer recipes?

Hi everyone,

Hope that some of you can help me out...we are going to a friend's house for New Years eve and everyone is bringing food...not meals, just apps. I am bringing a few regular standbys but am wondering if any of you have any yummy show stopper additions I could add.

I love this one and it's pretty easy.....

soften one package of cream cheese and mix with some wasabi paste (you can make from powdered wasabi with a little bit of water). Spread this on very thinly sliced and lightly toasted bagette. Put a good quality smoked salmon on top of that, and top with a leaf or two of cilantro and then zest lemon over the tray of them. Very nice and very yummy.

This is a great appetizer. It's disappears really quickly. It's fattening but you can make a lower fat version. I don't even like mayonnaise or cream cheese but I'll eat this.

Charleston Cheese

1/2 cup mayonnaise
1 (8 ounce) package cream cheese, softened
1 cup grated sharp Cheddar Cheese
2 green onions, chopped
6 round, buttery crackers, crushed
8 slices bacon, fried and crumbled

In a bowl, mix mayonnaise, cream cheese, Cheddar cheese, and onions. Put mixture into a greased quiche dish. Top with crushed crackers. Bake at 350 degrees for 15 minutes. Remove from oven and top with crumbled bacon. Serve with crackers.

Serves 15-20
 
This recipe is easy to make, no cooking required and tastes really good, skip if you are on a diet:

I like to make small skewers with toothpicks, small mozzarella balls and cherry tomatoes . Mozzarella comes marinated in oil and herbs, I get mine from Trader's Joe. I keep some of the oil and make a vinegrette by adding mustard, lemon or vinegar and chopped basil leaves. The end result looks like this except that I don't half my tomatoes:

This makes a really nice twist for the cream cheese, shrimp, sauce & crackers... I did the recipe and then mixed the coctail sauce and mini shrimp and put it in the middle (in a bowl just in case the side gets eaten and it won't ooze out all over) Instead of the wreath shape, you can just make a circle... I cut out red and green stars and bows from bell peppers for decoration...
 
Here's a good one that you can prep a bit ahead or cook and reheat:

I used ham since I already had it and cut the mozarella sticks in half for more of a 'finger' bite size.


I've Got the Need, the Need for Fried Cheese

Prep Time: 10 min
Cook Time: 15 min
Level: Intermediate
Serves: 4 servings

4 cups canola oil
2 eggs
1/4 cup milk
3/4 cup panko bread crumbs
3/4 cup Italian bread crumbs
8 ounces mozzarella string cheese, individually wrapped
16 thin slices salami, 2 1/2-inches in diameter
8 egg roll/spring roll wrappers

In a medium saucepan, add oil and heat to 325 degrees F.
In a medium shallow bowl, whisk eggs and milk thoroughly. In another medium bowl mix panko and Italian bread crumbs.

Dredge 1 entire side of egg roll wrapper into egg wash. Place 2 slices of salami in the center of wrapper, towards the edge closest to you. Place 1 stick of cheese on top of salami. Roll wrapper edge closest to you over the filling. Tuck ends and continue to roll until it forms an egg roll shape.
Dredge rolled wrapper in egg wash again, and then thoroughly coat in bread crumb mixture. (Wrappers can be frozen for future use at this point.)

Add 1 to 2 rolled wrappers to oil at a time, cooking 2 to 3 minutes, until golden brown. Be careful not to over cook, or cook on too high of a temperature as wraps may explode. Remove fried cheese to a paper-towel lined plate and serve immediately

I cooked mine ahead of time and reheated in a 350' oven for 15 min. They warmed up and crisped just perfect. Also made a quick marinara sauce for dipping, but a jar of spaghetti sauce would work perfect also !

Here's a quick one - albeit - NOT healthy. It is a hit with my kids though. They do pack a bit of a kick so you'll need some beverages to go with them.:D

You'll need
-16 oz. (half loaf) of mexican Velveeta cheese
-16 oz. hot Jimmy Dean pork sausage
package of cocktail bread (pumpernickel, rye, or sour dough)

In a double broiler melt the Velveeta while at the same time frying up the sausage. Drain the sausage and crumble it into the cheese after it is melted. Spoon a generous amount of the mixture onto the cocktail bread. You'll have enough cheese to make about 35-40 portions so you'll need a couple of large baking trays. Bake at 350 for about 15 minutes....just enough for the cheese to turn slightly brown and crisp the bread. Yummy!!
 
Here's a Taco Dip recipe that always gets raves:

8 oz sour cream
8 oz soft cream cheese
1 lb. ground sirloin
1 taco seasoning packet mix
1-2 (16 oz) jars of salsa (to your liking)
enough finely chopped tomatoes to cover the top of container
enough finely chopped lettuce to cover the top of container
Shredded three cheese taco cheese


  1. Mix soft cream cheese and sour cream and 1/2 to 3/4 packet of seasoning together in bottom of a 10x10" container (about 2" deep), and put aside.
  2. Thoroughly cook beef and remainder of seasoning together.
  3. Remove grease and immediately spread evenly on top of cream cheese/sour cream mix.
  4. Spread salsa evenly over beef.
  5. Add lettuce.
  6. Add tomatoes.
  7. Sprinkle cheese over top.
 
I like baking a round of brie cheese that you wrap beforehand in a refridgerated pastry (like Pillsbury french bread) for 15-20 min at 350. Brush with a jam/jelly of your choice when it comes out of the oven and serve with crackers or little hard bread pieces and an extra side of jam. So yummy!
