anyone with good pumpkin bread recipe?

I'm craving pumpkin bread and there are too many recipes to choose from and I have no idea how they'll come out.

I'm looking for a moist, healthier version not loaded with sugar. If it has 1/2 whole grain in it.. even better.

Anyone have a good recipe they can recommend?

Here is one I haven't tried yet, but it looks good. I may give it a go this weekend.

WW: Pumpkin Bread

1 cup applesauce
2 cups pumpkin (1 large can)
3 cups sugar
1 1/4 cup Egg Beaters
1/4 cup water
3 1/3 cup flour
1 1/2 tsp salt
1/2 tsp each: nutmeg, ground cloves, cinnamon
1 tsp baking powder
1 1/2 tsp baking soda

Mix applesauce, pumpkin, sugar and eggs. Add the rest of the ingredients.
Spray cooking spray in the bottom of three 8" loaf pans. Divide dough
between pans. Bake at 350 for 1 hour or until done.

This recipe makes three small loaves, 36 servings total. 2 POINTS per
serving.

Thanks for posting.

That still looks like a lot of sugar to me. 1 cup sugar for every cup flour....hmmm..I don't know. Wonder if I can use honey instead>

I have made these pumpkin muffins I found on the sparkpeople webpage. When I bought the ingredients which are so simple, the checker at the grocery store told me it was a Weight Watcher recipe and only 1 point. I am not on Weight Watchers but I figured they sounded good and easy.

It is 1 spice cake mix
1 can of pumpkin
Mix together and pour in a muffin of mini muffing pan

I put them in a mini muffin pan and baked at 350 for about 8-10 minutes.(that is with my oven which kind of varies since I need a new one, so just watch them) They were very moist. Someone I worked with addded mini chocolate chips and someone else added walnuts.
 
Do you have to follow the instructions for the spice cake mix's additional ingredients, or is it literally just the mix and the pumpkin?
 
Sorry it's not what you're looking for. I guess just try one of the recipes you found that looked good to you. And be sure to post it for us. :)

Do you use a regular-sized can of pumpkin (the same size as regular canned veggies) or one of those jumbo cans for this recipe? Also, can you recommend a good brand of spice cake mix? These sound yummy!
 
I got this recipe out of the American Cancer Society Cookbook several years ago. We love these muffins and they're a staple at my house in the fall. They're really moist and delicious.

Ingredients:
3/4 cup bran
3/4 cup whole wheat flour
3/4 cup granulated sugar
1 1/2 teaspoons cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup raisins **
1 cup canned cooked pumpkin
2 eggs (unbeaten)
1/4 cup vegetable oil
2/3 cup low-fat yogurt or buttermilk (I use plain yogurt)

** If desired, add 1/3 cup chopped walnuts and reduce the raisins to 1/2 cup

Directions:
Combine bran, flour, sugar, cinnamon, baking powder, baking soda, salt, and raisins; toss to mix. Add pumpkin, eggs, oil, and yogurt; stir just until combined.

Spoon batter into paper-lined or nonstick muffin tins. Bake in 400 degree F oven for 25 minutes or until firm to the touch. Makes 12 muffins.
 
Mmmmmmm. Michele. Those sound fantastic! I think I'll be heading to the grocery store for some pumpkin (unless I have a can hiding in the cabinet ;) ).

That recipe sounds delicious, you could also substitue applesauce for the oil and agave syrup for the sugar, or even honey. I can't wait to try these out. I'm sure you could also use more applesauce in place of the oil too, just would make them even moister.
