A Basic Vegetarian cookbook

Well, I have convinced my reluctant DH that unless you are a four-legged carnivore in our house, you will not be eating meat anymore.

So now he wants to know what is the beginner's basic vegetarian cookbook - you know, like the "Joy of Cooking" for vegetarians.

Not necessarily a beginner book, but Vegan Planet has a wide variety of recipes, and some very easy ones.

The Peta cookbook has lots of easy-to-make recipes.

The Farm Vegetarian Cookbook is an oldie but goodie, with lots of classic recipes (chili, burgers, etc.).
 
Another vote for Vegan Planet - excellent recipes!

I also like the Vegetarian Family Cookbook by Nava Atlas - most of the recipes have dairy and vegan options, and a lot of my favorite dinner recipes are from there. :)
 
Been a veggie for about 10+ years. Hands down the BEST of the BEST are the Moosewood Cookbook and The Enchanted Broccoli Forest by Mollie Katzen. Although there are some involved recipes in the cookbook, its my go-to cookbook for staples. Great marinara sauce, pesto, bread dough....yum yum! Although I can't do the more interesting stuff out of the cookbook for my hunny, a lot of the stuff can be made, frozen, and reheated. Mollie gives a lot of simple suggestions for veggies and spreads that you never thought could be a meal. These two cookbooks are a must for a veggie IMHO.

My first vegetarian cookbook was "Laurel's Kitchen." I just love reading it! I have the very old one, but there is a new version.

Whenever I was tempted to go eat a burger or some other meat, I would read the books dedication to the "glossy black calf on its way to slaughter" that caught Laurel's eye, and changed the way she looked at food forever.
 
Vegan With A Vengence. Do not let the name scare you. It is a really cool cookbook with very omi friendly recipes. You can also find most things that the cookbook lists in most grocery stores.
 
One of the BEST, most "Joy of Cooking" like veg. cookbooks that I've ever come across is Diana Shaw's "The Essential Vegetarian." This book is beautifully put together, it is FUNNY, and chock full of recipes, recipe variations, nutritional information, and a very thorough appendix. The subtitles are "Your Guide to the Best Foods on Earth: What to Eat, Where to Get it, and How to Prepare it". That about says it all--you won't be sorry :)

Another Veg. cookbook that I really like, has a lot of vegan friendly options or subs, is The Vegetarian Times cookbook. The recipes are mostly simple, list the nutritional info, and it has things like menu plans/substitutions, etc.

I also have Vegan Planet, Vegan with a Vengeance, and Mollie Katzen's Vegetable Heaven, and highly recommend each of those.

"Great Vegetarian Dishes" by Kurma das. I find these are the tastiest of all of the vegetarian dishes out there. I tweak the recipes when Kurma goes a bit heavy on the cream or cheese. Some of his entrees can be baked instead of fried. But this book could make a vegetarian of anyone.

Also, for a fancy cookbook, try "Lord Krishna's Cuisine. This is a guide to Indian vegetarian cooking. The recipes are complicated, so you might not want to cut your teeth on this one. Maybe later.

This is my most recent favorite cookbook "Super Natural Cooking" by Heidi Swanson. It's not really a basic book it's more for the gourmet vegetarian. But, she does explain what ingredients are, where to get them, and why they may be better for you or not. She has a section on natural sweeteners and goes through quite a few in detail. Fabulous recipes. You can see her website at www.101cookbooks.com I highly recommend it.
