Christmas Oatmeal Pudding:

3 cups bread cubes, day-old (preferably whole grain)
1/2-cup plain oatmeal
2 large eggs, beaten
1 1/2 cups 1% milk
1/4-cup honey or maple syrup
1-teaspoon vanilla
1 teaspoon grated orange rind or 1 tbsp. marmelade
2 teaspoons cinnamon
1/2 cup dried cranberries

Fill 9" by 14" cooking bowl 1/2 to 2/3 full with cubed day-old bread. Add oatmeal. Separately beat eggs and mix with milk, sugar, vanilla and nutmeg. Add dried currants. Bake until pudding has risen high and medium brown (usually 1 hour plus). It will rise like a soufflé, and fall as it cools. Serves 4

I wonder if I could use soy milk in place of milk in this recipe. Does anyone know if it would still come out like pudding? It just sounds so delicious.

IMO currants, craisins, or any other dried fruit would be good in this recipe. I've substituted craisins for raisins quite frequently in other recipes with good results. Currants are just a fancy raisin anyway.

sorry MJ that I took awhile to respond. Been on holidays and had no access to the computer. I double checked her recipe and the ingredients has cranberries, but her directions have currants. I used dried blueberries.

I think the sugar in the directions is probably the syrup and the nutmeg in the directions is the cinnamon. I'd like to know what it is baked at also. If it goes for an hour, I'm thinking a lower temperature like 325 - 350. What do y'all think?

Shelley.... did you post the recipe for that choco/banana bread with custard sauce yet? I may have missed it.
