Why can't I do step daily?

Well, technically you shouldn't do any exercise multiple days in a row with out a break. It increases your chances of (overuse) injury. You could step for a couple of days but then put an alternate form of cardio in there for a day and go back to stepping the next day.

The only exception to this rule that I am aware of is for freestyle training for your lower body where you do leg work 4-6 days per week so you are inevitabely doing it several days in a row.

Step in particular can cause plantar facitis (sp???) and overuse to the hip flexors. As the last poster said, you want to make sure to use your body in a variety of ways throughout the week. Also, it is often the kinds of exercise that we enjoy that we don't really need all that much. It's good to challenge yourself and your body to do forms of exercise which aren't your favorites,this give you more bang for your exercising buck - this also helps to make exercises you don't like too much new favorites...eventually ;)

That being said, step is definitely my cardio of choice; I'd step twice a day if I could!! I force myself to run and elliptical, I feel every second of those...not favorites yet but I keep hoping.

Your poor knees! Too much of anything is not good, if you ask me. Rotating different types of cardio gives your body a break and prevents overuse.
 
Two other reasons:

It can cause muscle imbalance (emphasizing the quads without much work for the hamstrings).

Your body will get used to it much faster if you do it very often, which is not a good thing if you want to burn calories (the body becomes more efficient at what it is familiar with, and figures out how to conserve energy) or make progress.
