Who gets Shape Magazine?

For those that get Shape magazine I would love to have the brownie recipe out of the September issue. I saw in the check out line at the grocery store today, but I couldn't justify spending $4 when all I wanted was the brownie recipe.:p

Thanks,

AHA - I have it in my grubby little hands right now... Here goes

COCOA BROWNIES
Makes: 16 Brownies
Prep Time: 10 minutes
Total Time: 35 minutes

Cooking spray
3/4 cup all-purpose flour
1/2 cup unsweetened cocoa
1/4 tsp salt
1/2 tsp baking powder
4 tablespoon unsalted butter, at room temp.
2/3 cup sugar
1 large egg
2 egg whites
1 tsp vanilla extract
2 tablespoons brewed strong coffee, cooled to room temp
1/2 cup nonfat Greek yogurt
1/4 cup mini semisweet chocolate morsels
1/4 cup chopped walnuts (optional)

Preheat oven to 350 deg. Line an 8-inch square baking pan with aluminum foil; spray foil lightly with cooking spray. In a medium bowl, whisk together the flour, cocoa, salt and baking powder. Set aside.

With an electric mixer, cream butter and sugar at medium speed for 2 to 3 minutes or until combined. Add egg, egg whites, vanilla and coffee. Continue beating until incorporated.

Scrape sides of bowl down with spatula and reduce mixer speed to low. Slowly add flour mixture, followed by yougurt and mix gently until just combined (batter will be thick). Stir in chocolate and walnuts, if using.

With a spatula, spread mixture evenly in pan and bake for 20 to 25 minutes, or until a toothpick inserted in center of pan comes out dry. Cool on a wire rack before removing from pan and slicing into 16 squares.

Nutrition score per serving (one 2-by 2-inch brownie): 114 cal, 5g fat (36% of cals), 3g sat. fat, 16g carbs, 2g protein, 1g fiber, 16mg calcium, <1mg iron, 61 mg sodium.

PHEW :D

Let me know how they come out. I'm not much of a baker but LOVE brownies so may try them myself.

Thanks,

I seem to recall someone saying they were cutting out the sweets :p **whistles nonchalantly out of threat  **

Mary - Oh thank you so much. I really appreciate all the trouble you went through to retype all of that for me. When I saw the calories were cut in half and the fat even more so, I definitely thought they be worth a try! I'll let you know how they turn out, except I'll have to PM you since I was busted by Catherine!

Catherine - Ummm! I wanted it for a church picnic I have this Sunday, I just thought I'd do everyone a favor and bring a lower calorie brownie, yeah that's it! That's my story and I am sticking with it. :p Seriously, I can't believe I was busted. I was however impressed how the calories were cut in half and the fat reduced, thought I would just add it to my arsenal for after I lose the weight and I am feeling like a cheat. I do hope to try and improve it a little more. :D

ooooh I love anything with cocoa powder ;) Thanks Linda for asking and Mary for typing that out. I may make it one day and share it with the fam.
Jess

I am quite impressed with the lower fat/cal content too !

Thanks from me too !

ETA: I just copied this link to the Nutrition site for those who may have missed this. Now we just need someone's review ? ? ? he he he
