What's in your brown bag - talking lunch

I'm trying to find more ways to cut my food down and eat healthier. I think lunch is huge pit fall. x( I usually end up eating part of what my toddler is having w/some fruit added. So I'm trying to find a better way to go. My DH loves these instant soups by Nile Spice (found at wholefoods and such). They vary in calories depending on the soup but for instance today I had cheddar brocolli: 130 cal fat 25 (I know the fat is kinda high). What do you have for lunch that is quick and healthy. Do you think this kind of soup is fine for lunch w/fruit on the side or do I need to toss it?

I eat some kind of salad for lunch nearly every day. Whether it's an antipasto, a chef's salad, a greek salad, or some strange mixture of crap I've cleaned out of my fridge, it's almost always a salad.

i've been having chocolate peanut butter oatmeal for lunch lately! it fills me up and stays with me so i don't want to snack an hour after i'm done!

I had a chicken caesar salad for lunch today and just used 1/2 of the dressing. It was very tasty, and I was proud that I didn't use all of the dressing like I would have in the past. Very satisfying lunch!

During the winter I like to have soup from Health Valley or Amy's brand. I always have something with it, like Malzo or bread. I also like a salad with a mix of albacore, salsa and cottage cheese. Then later in the day I'll eat an apple.

Antipasto is an italian combo w/a bunch of lunchmeats, cheeses & eggs. Pretty tasty but I don't recall seeing it outside the northeast.

I usually have a green salad with lots of veggies, red and green peppers, cucumbers, carrots, 1/2 a tomato and a can of tuna. Only 3 points on weight watchers. Other options could be boca burgers, chicken breasts-I get the tyson mesquite flavor and they can be cooked in the microwave-they are very tasty, cottage cheese or yogurt and some fruit.

Today, I had seitan, edamame and mashed cauliflower.

Some quick things I often take to lunch:
A sweet potato (I like them microwaved (about 6 minute, depending on size), and plain.
A bean salad made from tossing together a can each (drained and rinsed) of garbanzo beans, green beans, kidney beans and black soybeans. With a small jar of pimentos, and optionally artichoke hearts. Add a dash of zesty italian dressing.

I've also thrown together "salads' of garbanzo beans, edamame, and artichoke hearts (had a craving for something green and yellow!).

Mochi (Japanese sweet brown rice cakes that are dense, and puff up when you bake them--like in a toaster oven. There are NOT "rice cakes") are satisfying snacks with the spread of your choice.

Leftovers from dinner the night before, stuffed into a 3-cup tupperware container that is at least half full with frozen veggies. I heat it up in the microwave at work. Have been bringing my lunch to work like this for years. Saves money and calories as opposed to buying lunch daily, and also gives me incentive not to eat seconds at dinner--I need to save enough for lunch! I also eat the same on days I'm eating lunch at home.

I had a spinach & sweet tomato salad from home with additional cauliflower, chickpeas, red onions & broccoli with a spoonful of ranch dressing from the cafeteria salad bar. I know, that that about dooms the salad, but, think about it. There is no veggie I can therefore reject. Except of course beets, but that, will never happen. Plus, I only use a spoonful & it's probably not worse than a little over a tablespoonful. I really do love almost all veggies so, I'm not lying that I can eat this almost every day.

Julie,
Those soups are SOOO good. I used to eat them all the time for lunch. I don't think the fat is high at all. It's less than 20%. I don't think a little soup like that can sustain me anymore, but if you're trying to lose weight, the soups are a VERY lean lunch, and relatively satisfying. My doctor, who was a health nut, used to eat them for lunch.

Now I eat a salad with tuna or salmon and lots of veggies and kidney beans with a low-fat balsamic vinegrette dressing. It's a lot of food, but I've been working on getting myself used to eating more for lunch to sustain my energy throughout the day. Otherwise, I lose my energy in the afternoon, and start to crave sweets, so it's important for me.

I responded to this yesterday but my post isn’t here….weird. Anyways, I think that if you go for the Nile soups that have beans (ie Red beans and Rice), you will find more protein and fiber and less fat. Also, give the Fantastic foods soup a try. They are basically the same idea as Nile, but they have great flavors. My favorites are Cha Cha Chili, Pea Soup and Chinese Hot & Sour Soup. Other things for lunch can be fruit and yogurt with granola, leftovers from last night’s dinner, sandwiches, egg salad or tuna salad over lettuce with crackers, turkey chili, pasta, etc. I like to make meals that can be used for several servings (ie turkey chili with beans, veggie lasagna, etc.) and eat them several times in the week. Then I take the remainder and freeze them in individual servings in Tupper Crystal Ware. When I don’t have a lunch, I grab one of those out and I am all set!

I find that my best defense to eating badly is to be armed with good food. That way, you are halfway there b/c all you have to do is resist rather than resist and go find something good to eat.

Good Luck!
Christine

This is the best way of preparing a balanced and healthy lunch: taking leftovers from the night before. You could do this several times a week, and only have to come up with a couple of lunches that you actually have to put together in the morning.

a wheat low carb wrap with turkey and lettuce, an apple, a Dannon low fat fit yogurt, and an oatmeal bar. I graze throughout the day!

I usually have a salad with fat free ranch(sometimes with baked chicken) plus fruit and a diet dp. (gotta have the caffeine!)
