Sometimes I make a large pot of soup that lasts a couple of days. That way I get a break from making dinner
Tonight I'm going to make a version of tortilla soup that I sort of made up. There's no tortillas in it though!
Brown 1 1/4 lean ground turkey
1 chopped green bell pepper
1 chopped onion
some crushed garlic (I use alot)
diced potatoe (about 3 or as much as you want)
sliced carrots (as much as you want)
Add to that:
lots of cumin
a little dried oregano
a little corianer
sea salt
fresh ground black pepper
1 14.5 0z can diced tomatoes
1 can black beans, drained
some corn (a couple of handfuls, or three)
enough vegetable broth to make it as soupy as you want
Cook till it's hot and the potatoes and carrots are tender
When I serve it I top it with grated fat free or low fat cheese and some fat free sour cream. If I have any avocados I put some on top of that. Maybe drizzle a little salsa over that.
My husband and I get about two to three dinners from this and it's tasty....
